2½ cup pecan halves, (finely chopped)
1 cup graham cracker crumbs
1 cup brown sugar
1 tsp vanilla
½ cup maple syrup
4 to 6 Tbsp melted butter
1 (24-oz) package chocolate almond bark

Steps:

1/2 cup heavy cream
2 tablespoons bourbon
1/3 cup finely chopped toasted pecans

  • Put the chocolate in a medium bowl. Heat the cream in a small saucepan until it just comes to a boil. Pour the cream over the chocolate and stir once to mix the chocolate and cream together. Cover the bowl with plastic wrap and let stand at room temperature for 5 minutes. Uncover and whisk until smooth and shiny. 1/8 teaspoon kosher salt
1/2 cup bourbon
1 cup powdered sugar
3 tablespoons unsweetened cocoa powder
1 1/2 tablespoons molasses (honey, or pure maple syrup (I like molasses for the intense flavor))
For rolling: Crushed cookie crumbs

Steps:

  • Place a rack in the center of the oven and preheat the oven to 350 degrees F. Spread the pecans in a single layer. Bake until the pecans are toasted and crisp, about 8 to 10 minutes, stirring once halfway through. Immediate transfer to a cutting board to cool.
  • In the bowl of a food processor fitted with a steel blade, pulse together the cookie crumbs (if you are starting with whole cookies, make the crumbs now then double-check to make sure you have 2 1/2 cups).
