These two-bite tarts (three if you're daintier than I) are ideal for entertaining - they're perfect finger food, they look great, and they take - I'm not kidding - not even 10 minutes to make. Taste-wise, the filling is just right. Sour cream, cream cheese, whipping cream, lemon zest, brown sugar, and a little vanilla. It's the perfect base for those beautiful bursts of blueberries.

MINI BLUEBERRY TARTS

I served this recipe to my family while we were on vacation and they were all amazed! The best part: I didn't spend tons of time on it thanks to refrigerated pie crust. Watch your mini tarts around the 13-minute mark to make sure they don't brown too quickly. If you like, sprinkle the tops with coarse sugar for a beautiful finishing touch.-Allison Bell, Hillsdale, New Jersey

Tips:

  • To ensure a smooth and creamy cheesecake filling, make sure the cream cheese is softened to room temperature before mixing. This will help it blend easily with the other ingredients and prevent lumps.
  • If you don't have a food processor, you can crush the graham crackers in a large zip-top bag using a rolling pin. Alternatively, you can place the crackers in a large bowl and use the back of a spoon to crush them.
  • When pressing the graham cracker crumbs into the tart shells, use the bottom of a measuring cup or glass to help you evenly distribute and compact the crumbs.
  • If you don't have any fresh blueberries, you can use frozen blueberries instead. Just thaw them before using.
  • To prevent the blueberry filling from becoming too runny, make sure to drain any excess juice from the blueberries before adding them to the filling.
  • If you don't have any lemon juice, you can use white vinegar instead. However, lemon juice will give the filling a brighter flavor.
  • To make sure the cheesecake tarts are set properly, chill them in the refrigerator for at least 4 hours before serving.

Conclusion:
