1-1/4 teaspoons unflavored gelatin
2 tablespoons cold water
1 package (8 ounces) cream cheese, softened
1-1/2 teaspoons lemon juice
1/2 teaspoon grated lemon zest
1 cup marshmallow creme
1-1/2 cups whipped topping
1 cup fresh or frozen blueberries

Steps:

  • In a small bowl, combine wafer crumbs and butter. 1/4 cup plus 3 tablespoons granulated sugar
1/2 teaspoon kosher salt
1 stick unsalted butter, melted
1 cup whole-milk ricotta
16 ounces cream cheese
1 cup confectioners' sugar
1 tablespoon finely grated lemon zest, plus 4 tablespoons fresh juice (from 1 to 2 lemons)
1 1/4 cups heavy cream
5 cups blueberries (from 3 pint containers)
1 1/2 teaspoons cornstarch
Fresh mint leaves, for serving (optional)

Steps:

1 1/2 cups graham cracker crumbs
2 tablespoons brown sugar
1/3 cup margarine, melt
1 cup whipped cream
1 (8 ounce) cream cheese, Room temp
1/4 cup sugar
1 tablespoon gelatin
3 tablespoons milk
1 cup blueberry syrup (or any topping you want)

Steps:

  • Combine crumbs and sugar, pour melted butter. Press into pan (I use 9" springform pan) chill covered (I make this the night before).
  • Beat cream cheese, add sugar.
  • Soak gelatin in milk for 5 minutes, and heat it up (or place it in microwave) to melt the gelatin.
  • Gradually pour this while beating the cream cheese mixture.
  • Fold in whipped cream.
  • Spread on top of crust. Top with blueberry syrup.
  • NOTE: the syrup must be thick or else it'll fall from the cake.
