8 flour tortillas
2 cups grated Cheddar cheese
2 cups grated Jack cheese
Olive oil

Steps:

  • Brush 4 tortillas lightly on one side with the oil. Place 4 tortillas on the grill oiled side down. Top with cheese to taste and another tortilla on each. Turn quesadillas when bottoms are browned and cheese begins to melt. Brown on the other side. Serve hot.

Only 3 ingredients but my youngest DS loves it! Like the name says, it is very basic and is also very low maintenance. I would saute meat and/or veggies and have nonfat sour cream, salsa or guacamole to dip it in, but this is the basic-est version of the quesadilla. You can also use this as an appetizer and cut into thinner wedges. My DS can eat the whole thing now for dinner, but I thought I would list 2 servings. Enjoy!

1 1/2 cups low-fat cheddar cheese, grated
2 (10 inch) flour tortillas, soft (I use whole wheat)
low-sodium taco seasoning, to taste

Steps:

  • Place one tortilla in a nonstick pan and set on stove with the burner off. Sprinkle with cheddar cheese and taco seasoning.
  • Turn heat to medium and place other tortilla on top. After about 5 minutes, gently lift edge of quesadilla to see if bottom tortilla is starting to brown. It should take a little longer, but keep a close eye on it. When it is a light golden colour, slide quesadilla on to a plate.
  • Flip quesadilla into the pan and brown other side, checking frequently. Slide on to a cutting board. Let sit for a couple of minutes and then cut into quarters.

Twelve 5-inch corn tortillas
1/2 pound Cheddar, Monterey Jack or Colby cheese, thinly sliced
4 tablespoons (1/2 stick) unsalted butter
1 pound vine-ripened tomatoes (about 2 tomatoes)
1/4 small red onion
2 to 3 tablespoons chopped fresh cilantro
Hot sauce such as chipotle or Mexican green chili sauce to taste (about 1/2 teaspoon)
Kosher salt
1 Hass avocado, halved, seeded, and sliced

Steps:

  • Lay 6 tortillas on a work surface. Divide the cheese among the tortillas. (Its best to leave about an inch border on the edge of the tortilla uncovered to allow for the spread of the melting cheese.) Top with remaining tortillas and press gently to seal. Melt 1 tablespoon butter in a small skillet. Carefully place a quesadilla in the skillet and fry, turning once, until golden and little bubbles appear on both sides, about 4 to 5 minutes total. Repeat with the remaining quesadillas, wiping out the pan between batches if the butter burns, and adding more butter, as needed.
  • While the quesadillas cook make the salsa: Halve the tomatoes and grate them on the largest holes of a box grater into a bowl, discarding the skins. Grate the onion into the tomato, and stir in the cilantro, hot sauce, and salt, to taste.
  • Cut each quesadilla into 4 wedges with a pizza wheel or knife and serve with the salsa and avocado.

1 cup cooked ham, diced
1 egg
1 cup egg substitute or 4 eggs
salt and pepper
1 cup low-fat cheddar cheese, grated
1 cup part-skim mozzarella cheese, grated
4 whole wheat tortillas or 4 soft flour tortillas

Steps:

  • Over medium-low heat, heat ham in a nonstick frying pan sprayed with nontick spray. While ham is warming, whisk together the egg and egg substitute. Add to ham and stir until eggs are just barely cooked. Salt and pepper to taste.
