Pork chop Milanese is an Italian dish consisting of a breaded and pan-fried pork chop. It is a popular dish in northern Italy, particularly in the Lombardy region, where it is often served with spaghetti, risotto, or potatoes. The dish is believed to have originated in the city of Milan, hence its name.

This article presents three variations of pork chop Milanese: the classic recipe, a version with a crispy Parmesan crust, and a healthier baked version. All three recipes are straightforward to follow and require easily accessible ingredients. The classic recipe yields a tender and juicy pork chop with a golden-brown, crispy coating. Time 30m

Yield 6 servings

Number Of Ingredients 7

1 cup panko (Japanese bread crumbs)
1/2 cup finely grated Parmesan
2 large eggs
6 boneless pork loin chops, pounded thin to 1/3 inch-thick (1 1/2 pounds total)
Salt and freshly ground black pepper
1/4 cup plus 3 tablespoons olive oil
6 lemon wedges

Steps:

  • Preheat the oven to 200 degrees F.
  • Coarsely crush the panko into a large shallow bowl. Stir the cheese into the panko. Lightly beat the eggs in another large shallow bowl. Sprinkle the pork generously with salt and pepper. Dip the pork, 1 piece at a time, in the egg, allowing the excess to drip off, then dredge the pork in the crumb mixture, patting to coat completely. Place the pork on a small baking sheet.
  • Heat 1/4 cup of oil in a heavy large skillet over medium-high heat. Add half of the pork to the hot oil and cook until golden brown and just cooked through, about 3 minutes per side. Transfer to paper towels to drain, then transfer them to a clean baking sheet and keep them warm in the oven. Add the remaining 3 tablespoons of oil to the skillet and fry the remaining pork.
  • Transfer the pork to plates and serve with lemon wedges.

Time 40m

Yield 6 servings

Number Of Ingredients 11

6 boneless pork loin chops ( about 5 ounces each)
3/4 c. all-purpose flour
Kosher salt and black pepper, to taste
1/4 c. half-and-half or whole milk
3 large eggs
1 1/2 c. seasoned breadcrumbs
3 to 4 tablespoons olive oil
3 to 4 tablespoons salted butter
1 small piece parmesan cheese
5 oz. baby arugula, baby spinach, or spring greens
2 lemons, cut into wedges

Steps:

  • Place the pork chops between 2 sheets of plastic wrap and use a mallet or a rolling pin to pound them very thin (no thicker than ¼ inch). If you think they're thin enough, pound 'em a few more times-the thinner the better!
  • Place the flour in a shallow dish and mix in some salt and pepper. In another dish, whisk together the half-and-half and eggs. Place the breadcrumbs in a third dish. Set the 3 dishes aside.
  • Season both sides of the pork chops with salt and pepper. Coat them one at a time in the flour, then in the egg mixture, and then in the breadcrumbs. Lay in a single layer on a baking sheet until you're ready to cook them.
  • Combine 1 tablespoon each olive oil and butter in a large cast-iron skillet over medium-low heat. When the butter is melted and hot, add 2 breaded pork chops and cook until the breading is golden brown and the pork is cooked through, about 2 minutes per side (add more oil or butter to the skillet when you flip, if necessary). Remove to a plate lined with paper towels. Repeat with the remaining oil, butter, and pork in two more batches.
  • Shave the parmesan using a vegetable peeler. Place a piece of pork on each plate and top with the greens. Squeeze a little lemon juice over the greens, then sprinkle with a little salt. Top with the parmesan shavings and serve with more lemon wedges.

Tips:

  • Use thin-cut pork chops. This will help them cook evenly and prevent them from becoming tough.
  • Pound the pork chops to an even thickness. This will also help them cook evenly.
  • Season the pork chops with salt and pepper before dredging them in flour. This will help them develop a flavorful crust.
  • Use a light hand when dredging the pork chops in flour. Too much flour will make the coating thick and heavy.
  • Use a large skillet or griddle to cook the pork chops. This will help them cook evenly and prevent them from overcrowding.
  • Cook the pork chops over medium heat. This will help them cook through without burning.
  • Flip the pork chops halfway through cooking. This will help them cook evenly.
  • Serve the pork chops immediately with your favorite sides.

Conclusion:

Pork chop Milanese is a simple but delicious dish that is perfect for a weeknight meal. It is easy to make and can be tailored to your own taste preferences. With a few simple tips, you can make sure that your pork chop Milanese turns out perfectly every time. So next time you are looking for a quick and easy meal, give pork chop Milanese a try.
