2 cups all-purpose flour
3/4 cup packed brown sugar
1/2 cup sugar
2 teaspoons baking soda
1-1/2 teaspoons ground cinnamon
1/2 teaspoon salt
1/4 to 1/2 teaspoon ground cloves
1/8 teaspoon ground nutmeg
3 large eggs
1/2 cup butter, melted
3 ounces cream cheese, cut into 1/4-inch cubes and softened
1/2 teaspoon vanilla extract
2 cups chopped peeled apples
1/2 cup raisins
1/2 cup chopped walnuts
TOPPING:
1/2 cup packed brown sugar
1/2 cup finely chopped walnuts
1/4 cup all-purpose flour
2 tablespoons butter, melted
1 teaspoon ground cinnamon
1 teaspoon grated lemon zest

  • In a large bowl, combine the first eight ingredients. Combine the eggs, butter, cream cheese and vanilla; stir into dry ingredients just until moistened (batter will be stiff). 2 c all-purpose flour
3/4 c brown sugar
1/2 c granulated sugar
2 tsp baking soda
1/2 tsp salt
1 1/2 tsp cinnamon
1/2 tsp ground cloves
1/8 tsp ground nutmeg
2 c apples (cortland, macintosh, pippin are good varieties), coarsely chopped
1/2 c raisins
1/2 c chopped walnuts
3 large eggs
1/2 c butter, melted
4 oz cream cheese, cut into small pieces
1/2 tsp vanilla extract
TOPPING
1/2 c walnuts, finely chopped
1/2 c brown sugar
1/3 can(s) all-purpose flour
1 tsp cinnamon
1 tsp grated lemon peel
2 Tbsp butter, melted

Steps:

  • 1. Preheat oven to 375°F. Line 24 cups of a regular-size muffin pan with 24 paper cupcake liners; set aside.
  • 2. Combine flour, brown sugar, sugar, baking soda, salt, cinnamon, cloves and nutmeg; set aside.
  • 3. Combine apples, raisins, walnuts, eggs, butter, cream cheese, and vanilla. Stir apple mixture into the dry ingredients, adding a little at a time, and stir until just combined (batter will be stiff). Do not over-mix.
