1 celery stalk, halved

3 canned San Marzano tomatoes, seeds removed

1/2 pound dry tubetti or ditalini pasta

Steps:

  • Cover the beans with water, and add the baking soda, half the celery stalk and the bay leaf. Soak them for 24 hours.
  • Drain and rinse well. Place in a pot and add cold water to two inches above the beans. Add the rest of the celery, the onion, tomatoes, and 1 tablespoon of olive oil. Bring to a boil, then reduce heat and simmer until the beans are tender, about 1 hour 20 minutes.
  • Bring a large pot of lightly salted water to a boil. Meanwhile, drain the beans, reserving 1 cup of the cooking liquid. Discard the celery, onion, and bay leaf. In a soup pot over low heat, sauté the garlic in 1 tablespoon of the olive oil for 1 minute, add 2 tablespoons parsley, and continue to sauté until garlic is light brown, 1 or 2 more minutes. 1 tablespoon extra virgin olive oil
1 medium or large onion, chopped
1 1/2 teaspoons chopped fresh rosemary
2 large garlic cloves, minced
1 28-ounce can chopped tomatoes with juice
Pinch of sugar
Salt and freshly ground pepper
1 tablespoon tomato paste
1 small dried red pepper, or 1/4 to 1/2 teaspoon red pepper flakes (optional)
A bouquet garni made with a bay leaf, 1 or 2 Parmesan rinds, and a few sprigs of thyme and parsley
6 ounces elbow macaroni or small shells (1 cup)
2 to 3 tablespoons chopped fresh parsley
2 ounces Parmesan cheese, grated (1/2 cup), optional

Steps:

  • Make the simmered beans as directed, changing only the amount of beans (use 2 quarts water). Remove onion and bay leaf, using tongs or a slotted spoon, as directed. Place a strainer over a bowl and drain beans. Measure broth and top up with enough water to make 6 cups.

1 stalk celery, diced
½ yellow onion, chopped
¾ cup dry elbow macaroni
¼ cup tomato paste
3 cups chicken broth, or more as needed, divided

¼ teaspoon crushed red pepper flakes, or to taste

3 cups chopped Swiss chard
1 (15 ounce) can cannellini (white kidney) beans, drained

Steps:

  • Heat oil in a skillet over medium-high heat. Brown sausage while breaking it into small pieces, about 5 minutes. Reduce heat to medium. Add diced celery and chopped onion. Cook until onions are translucent, 4 to 5 minutes. Add dry pasta. Cook and stir 2 minutes.

6 ounces prosciutto ends, diced
1 large onion, chopped
2 cloves garlic, minced (green part removed)

6 to 8 cups chicken or beef stock, preferably homemade
Coarse salt and freshly ground pepper to taste
1/2 pound penne rigate

1/2 pound chopped dandelion leaves or escarole
Freshly grated Parmesan cheese

Steps:

  • Soak the Borlotti beans in water to cover overnight.

1 pound dried cranberry beans (also called Roman or October beans)
1/4 cup olive oil
1 large clove garlic, peeled and sliced
1 large onion, peeled and finely chopped
1 large, ripe tomato, peeled, seeded and chopped
1/2 teaspoon fresh rosemary leaves or 1/4 teaspoon dried
5 cups water
5 cups chicken stock
Salt, if desired
Freshly ground black pepper
8 ounces tagliatelle or fettucine noodles, preferably fresh

Steps:

  • Sort, rinse and soak the beans overnight in enough water to cover them by two inches. Alternatively, quick-soak the beans by boiling them for 5 minutes in the same amount of water. Remove from heat and let stand, covered, for an hour.
  • Heat the olive oil in a skillet and saute the garlic until it is golden brown. Remove the garlic with a slotted spoon. Add the chopped onion to the oil and saute gently until soft but not browned. Add the chopped tomato and rosemary and cook gently for 2 minutes.
  • Drain the beans and put them into a large, heavy pot together with the sauteed ingredients. Add 5 cups of water and 5 cups of stock and bring to a boil. Turn down the heat until the liquid barely simmers, using a metal heat dispersion plate if necessary. Cook for about 2 hours, stirring occasionally, or until the beans are tender but not mushy.
  • Strain the cooked beans, reserving the liquid. Puree half the beans in a food processor or grind them through the finest disk of a food mill.
  • Return the pureed beans and 2 1/2 cups of cooking liquid to the pot and stir to combine. Add the cooked whole beans and correct the seasonings, adding salt and pepper if desired. Cover the pot and adjust the heat so the soup barely simmers.
  • Cook the noodles in rapidly boiling water until barely tender. Drain.
  • Divide the noodles among the individual soup bowls, reserving half if second helpings are to be served. Ladle the hot soup over the noodles and serve at once.

1 1/2 teaspoons kosher salt, plus more to taste
Freshly ground pepper to taste
3/4 pound small pasta, like orecchiette or elbow macaroni
3 tablespoons chopped Italian parsley
2 cups stemmed arugula, cut across into 1/4-inch-wide strips
4 plum tomatoes, seeded and diced
2 teaspoons extra-virgin olive oil
2 teaspoons red wine vinegar
1/4 teaspoon kosher salt
18 1/4-inch-thick slices French baguette, about 1 inch in diameter

  • To make the soup, heat the oil in a large saucepan. Add the onion, carrot and celery and saute over medium heat until the onion is soft, about 5 minutes. Stir in the beans, 1 quart of broth and the water. Bring to a boil, lower heat and simmer until the beans are soft, about 1 1/2 hours. Add 2 quarts of broth and season with the salt and pepper. 1 28-ounce can Italian plum tomatoes, pureed, then strained to remove skin and seeds

1 16-ounce box tubular pasta, like penne
3 ribs celery, sliced thin
6 tablespoons of grated pecorino cheese, plus additional cheese to serve on the side

Steps:

  • Put the beans in a large pot of water. Wrap celery greens, leek, parsley, bay leaf and peppercorns in cheesecloth to make a bouquet garni, and add to pot. Add salt and cloves of garlic.
  • Bring to a boil, then lower heat and simmer until tender, about an hour. Drain beans. Remove garlic and bouquet garni.
  • Heat 1 tablespoon of the olive oil in a large pot, add chopped garlic and half of the beans. Heat for a few seconds, then add the canned and fresh tomatoes. Cook for about 20 minutes. Then, in a food processor, puree the sauce and return to pan.
  • Bring large pot of water to boil and add pasta.
  • Meanwhile, heat the remaining olive oil and saute the celery over medium heat for about five minutes, until tender.
  • When the pasta is not quite cooked, drain almost completely, saving about 1/2 cup of the cooking liquid. Add the pasta and liquid to the sauce, as well as the rest of the beans and the celery ribs. Cook for 5 or 10 minutes more, until the pasta is done. Add the cheese.
