4 large (8- to 10-ounce) Idaho baking potatoes
Good olive oil
Whipped Feta (see recipe)
Chopped fresh chives
6 ounces Greek feta, crumbled
2 ounces cream cheese, at room temperature

SHEET-PAN CHICKEN AND POTATOES WITH FETA, LEMON AND DILL

Sheet-Pan Chicken and Potatoes With Feta, Lemon and Dill image

In this simple but elegant sheet-pan dinner, chicken thighs and potatoes roast together at a high temperature, coming out crispy and golden. A generous squeeze of lemon juice, along with a scattering of fresh dill and feta cheese, elevates this dish from weeknight meat and potatoes to dinner-party fare. While the chicken will still be delicious if marinated for just 30 minutes, marinating it for several hours will yield the best results.

Time 45m

Yield 4 servings

Number Of Ingredients 9

3 tablespoons olive oil
2 tablespoons lemon juice (from about half a lemon)
1 garlic clove, minced
1/2 teaspoon dried oregano
Kosher salt and black pepper
1 1/2 to 2 pounds small bone-in, skin-on chicken thighs (4 to 6 thighs)
4 small Yukon gold potatoes (about 1 pound), cut into 3/4-inch pieces
2 ounces feta cheese, crumbled (about 1/2 cup)
2 tablespoons chopped fresh dill

Steps:

  • In a medium bowl, whisk 2 tablespoons oil with 1 tablespoon lemon juice, the garlic, oregano, 1 teaspoon salt and 1/2 teaspoon pepper. Add the chicken thighs toss to coat. Let the chicken marinate for at least 30 minutes at room temperature, or up to 8 hours, covered, in the refrigerator.
  • Heat the oven to 425 degrees. On a sheet pan, drizzle the diced potatoes with the remaining 1 tablespoon oil and sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper; toss well and move to one side of the pan. Pat the chicken thighs dry and place them, evenly spaced, on the other side of the pan.
  • Roast for 15 minutes, toss the potatoes, then return everything to the oven and roast until the chicken is cooked through, the skin is golden brown, and the potatoes are tender, 15 to 25 more minutes, depending on the size of the thighs. If the potatoes are not quite tender, remove the chicken thighs to a plate to rest, and return the potatoes to the oven to roast until tender, another 5 to 10 minutes.
  • Place the chicken and potatoes on a serving platter, and sprinkle them 1 tablespoon lemon juice. Scatter the feta and dill over the potatoes, sprinkle the whole dish with salt and pepper, and serve hot.

BAKED FETA MASHED POTATOES

Baked Feta Mashed Potatoes image

We took inspiration from the wildly popular baked feta pasta recipe of TikTok fame and reimagined it to create a big-batch thanksgiving side dish. The best part is no more boiling water and crowding your stovetop. Instead, we put all the ingredients together in one dish and then bake it in the oven. Cooking the dish covered helps simmer and steam the potatoes at the same time, making them smooth and fluffy when mashed. The baked feta bubbles and melts into the potatoes to lend a subtle and delicious tanginess.

Time 2h

Yield 6 to 8 servings

Number Of Ingredients 7

6 tablespoons unsalted butter, cut into cubes, plus more for the dish
4 pounds russet potatoes, peeled, quartered lengthwise and sliced into 1/4-inch-thick pieces
2 cups half-and-half
Kosher salt and freshly ground black pepper
One 7-ounce block feta cheese
1/2 cup sour cream
1 tablespoon chopped chives

Steps:

  • Preheat the oven to 400 degrees F. Grease a 9-by-13-by-2-inch (3.75-quart) casserole dish with butter.
  • Put the potatoes in the prepared casserole dish, add the half-and-half and stir to combine. Spread the potatoes in an even layer and place the block of feta in the center, on top of the potatoes. Season with 1 tablespoon salt and a few grinds of pepper and dot the butter over the potatoes. Cover the casserole with aluminum foil and bake until the half-and-half is simmering, the cheese is bubbling and the potatoes are cooked through and very tender when pierced with a small sharp knife, about 1 hour and 20 minutes.
  • Remove and reserve the aluminum foil. Use a potato masher to mash the ingredients in the casserole dish until well combined, smooth and fluffy. Fold in the sour cream and season with salt and pepper. Cover the mashed potatoes with the reserved foil and return to the oven until warmed through, about 10 minutes. Top with the chopped chives and a few grinds of pepper.

CRUSHED NEW POTATOES WITH MINT & FETA

Crushed New Potatoes With Mint & Feta image

Quick to prepare and full of summer freshness, eat this with your eyes closed to conjure up your own Greek paradise. Serve with grilled meat or fish and a salad.

Provided by English_Rose

Categories     Lunch/Snacks

Time 35m

Yield 4 serving(s)

Number Of Ingredients 8

1 lb new potato
4 tablespoons extra virgin olive oil
1 lemon
1 tablespoon honey
1 red onion
3 tablespoons of fresh mint
7 ounces feta
black pepper

Steps:

  • Cook the new potatoes in a large pan of boiling water until tender, about 10 minutes, depending on size.
  • Drain thoroughly and set to one side.
  • Pour the oil into a small bowl add the finely grated zest and juice of the lemon and the honey. Whisk.
  • Using the end of a rolling pin or a large wooden spoon, roughly crush the potatoes, not so they are completely broken up but just enough so their skins split and the flesh is exposed so it soaks up some of the dressing.
  • Finely chop the red onion and sprinkle over the potatoes.
  • Chop the mint and crumble the feta and add to the potatoes, drizzle over the dressing and toss to mix, season well with black pepper and salt if desired, not forgetting the feta can be a bit salty.
  • Serve with salad leaves.

Tips:

  • Choose the right potatoes: Use small, firm new potatoes that are about 1-2 inches in diameter. Avoid using large or old potatoes, as they will take longer to cook and may not be as tender.
  • Scrub the potatoes well: Before cooking, scrub the potatoes thoroughly with a vegetable brush to remove any dirt or debris. Do not peel the potatoes, as the skin is packed with nutrients and flavor.
  • Steam or boil the potatoes: The best way to cook new potatoes is to steam or boil them until they are tender but still hold their shape. Steaming is the preferred method, as it helps to preserve the nutrients and flavor of the potatoes.
  • Use good quality feta cheese: Feta cheese is a key ingredient in this recipe, so it is important to use a good quality variety. Look for feta that is creamy and flavorful, with a slightly tangy taste.
  • Add fresh herbs: Fresh herbs, such as dill, parsley, or mint, can add a pop of flavor to the dish. Stir them in just before serving.

Conclusion:

These new potatoes with feta are a delicious and easy-to-make side dish that is perfect for any occasion. The potatoes are tender and flavorful, and the feta cheese adds a creamy and tangy touch. This dish is sure to be a hit with your family and friends. Whether you are looking for a simple weeknight meal or a dish to impress your guests, these new potatoes with feta are a great option. They are quick and easy to make, and they are always a crowd-pleaser. So next time you are looking for a delicious and healthy side dish, give this recipe a try.
