NEW ORLEANS-STYLE BARBEQUED SHRIMP

New Orleans-Style Barbequed Shrimp image

Provided by Food Network

Categories     main-dish

Time 42m

Yield 8 main course servings, or 12

Number Of Ingredients 17

4 pounds fresh or frozen large or extra-large shrimp (21 to 25 count/per pound), in the shell, see note
5 tablespoons chili powder
1 tablespoon salt, plus 2 teaspoons
16 tablespoons (2 sticks) unsalted butter
2 medium onions, peeled and finely chopped
6 cloves garlic, peeled and minced
1 cup ketchup
1 cup extra-virgin olive oil
5 tablespoons light brown sugar
1 cup Worcestershire sauce
1 lemon, sliced
3 tablespoons freshly squeezed lemon juice (from 1 lemon)
3 bay leaves
2 teaspoons dried oregano
2 teaspoons dried thyme leaves
1 teaspoon cayenne pepper
Several dashes Louisiana-style hot sauce

Steps:

  • Cook's Note: You can buy large, frozen tiger shrimp that have been deveined but are still in the shell. If you use these, thaw them according to the package directions. If using fresh shrimp, you can ask the person at the fish counter to devein them for you in the shell. You can also do this yourself: Using kitchen shears, cut the shell along the vein and pull the vein out with your fingers. Or, you can just skip the deveining process. The vein won't hurt you.
  • Combine 3 tablespoons of the chili powder and 1 tablespoon of the salt in a small bowl. Rub the shrimp with this mixture, making sure you rub some into the open cut where the shrimp as been deveined (if applicable) to season the shrimp inside the shell. Place the shrimp in a shallow, non-reactive pan, cover with plastic wrap and refrigerate while you make the sauce.
  • In a saucepan set over medium-high heat, melt the butter. Add the onion and garlic and cook for 3 to 5 minutes, until soft, but not browned. Add the ketchup, oil, brown sugar, Worcestershire sauce, lemon, lemon juice, bay leaves, oregano, thyme, and cayenne, as well as the remaining 2 tablespoons chili powder and 2 teaspoons salt. Stir to mix. Reduce the heat to a simmer, and cook, covered, stirring occasionally, for about 20 minutes, or until thick. Remove from the heat, uncover, and cool to room temperature. Remove and discard the lemon slices and bay leaves. Pour 1 1/2 cups of the sauce over the shrimp. Toss to coat well. Cover and refrigerate the shrimp for 1 to 2 hours. Cover and refrigerate the remaining sauce separately and save for dipping.
  • Prepare a charcoal fire or preheat a gas grill for direct grilling over high heat.
  • While the grill is heating, reheat the remaining sauce in a small, covered saucepan over very low heat, it will only take a few minutes. Watch the sauce carefully so that it doesn't burn.
  • Remove the shrimp from the pan and discard the marinade. Grill the shrimp for 2 to 3 minutes per side, until the shells are orangey-pink. To test for doneness, take a shrimp off the grill, remove the shell and cut the shrimp in half: The flesh should be white and firm throughout.
  • Serve with the warm sauce for dipping, and a large bowl for the shells.

BARBECUE SHRIMP - NEW ORLEANS STYLE

Barbecue Shrimp - New Orleans Style image

A recipe I found on www.nomenu.com. This was a recipe that was made/originated at Manale's in New Orleans. The dish is simple: huge whole shrimp in a tremendous amount of butter and black pepper. The essential ingredient is large, heads-on shrimp, since the fat in the shrimp heads makes most of the flavor. Resist the urge to...

Categories     Seafood Appetizers

Time 15m

Number Of Ingredients 10

3 lbs fresh gulf shrimp, 16-20 count to the pound (with heads on)
1 tablespoon fresh lemon juice
2 teaspoons worcestershire sauce
1⁄4 cup dry white wine
2 garlic cloves, chopped
1⁄4 cup black pepper (or as needed to cover all the shrimp in a light film of pepper)
1⁄4 teaspoon salt
1 1⁄2 cups butter, softened
2 teaspoons paprika
1 loaf french bread

Steps:

  • 1. Rinse the shrimp and shake the excess water from them. Put them in a large skillet (or two) over medium heat, and pour the lemon juice, wine, Worcestershire, and garlic over it. Bring the pan to a light boil and cook, agitating the dish, until the shrimp turn pink.
  • 2. Cover the shrimp with a thin but complete layer of black pepper. You must be bold with this. Trust me, it is almost impossible to use too much pepper in this dish. Continue to cook another couple of minutes, then sprinkle the paprika and salt over the pan.
  • 3. Lower the heat to the minimum. Cut the butter into tablespoon-size pieces, and add three at a time to the pan, agitating the pan as the butter melts over the shrimp. When one batch is completely melted, add another until all the butter is used. Keep agitating the pan to make a creamy-looking, orange-hued sauce.
  • 4. When all the butter is incorporated, serve the shrimp with lots of the sauce in bowls. Serve with hot French bread for dipping. Also plenty of napkins and perhaps bibs.

NEW ORLEANS STYLE BBQ SHRIMP

New Orleans Style BBQ Shrimp image

Delicious shrimp. You don't have to use shell on shrimp but it improves the flavor so much.

Provided by barbara lentz

Categories     Seafood

Time 20m

Number Of Ingredients 12

12 large head on shrimp
2 Tbsp cajun seasoning
1 Tbsp oil
8 clove garlic minced
2 Tbsp fresh rosemary finely chopped
4 Tbsp worcestershire sauce
2 Tbsp crystal hot sauce
1 large lemon juiced and quartered
1/4 c honey
1/2 c beer
2 stick butter cut into chunks
salt and pepper to taste

Steps:

  • 1. Clean the shrimp by squeezing the head and running cold water over the head. Cut along the outside of shrimp and remove poop vein. Pat dry and sprinkle half the cajun seasoning over the shrimp. Set aside.
  • 2. Add the oil to a large skillet. Add the garlic and rosemary and saute 1 minutes. Add the remaining Cajun seasoning, Worcestershire sauce, hot sauce, lemon juice and quarters, and honey. Cook 1 minute. Add the beer scrapping up the bottom of the pan and bring to a boil. Let boil about 3 minutes.
  • 3. Add the shrimp and cook about 4 minutes. With slotted spoon remove the shrimp and the lemon quarters. Whisk in the butter one chunk at a time over low heat until sauce with glossy and well incorporated. Taste and adjust for salt and pepper. Transfer the shrimp back to the pan.
  • 4. Serve the shrimp with lots of sauce and fresh bread for soaking up the sauce.

Tips:

  • Use fresh shrimp: Fresh shrimp have a sweeter, more delicate flavor than frozen shrimp. If you're using frozen shrimp, thaw them in cold water before cooking.
  • Season the shrimp well: Shrimp can easily become bland, so be generous with the seasonings. A good combination of spices to use is paprika, garlic powder, onion powder, and cayenne pepper.
  • Don't overcook the shrimp: Shrimp cook quickly, so it's important not to overcook them. Overcooked shrimp will become tough and rubbery.
  • Serve the shrimp immediately: Shrimp are best served immediately after they're cooked. This will help them retain their flavor and texture.

Conclusion:

New Orleans-style shrimp is a delicious and easy-to-make dish that's perfect for any occasion. With its bold flavors and vibrant colors, this dish is sure to be a hit with your friends and family. So next time you're looking for a quick and easy meal, give this recipe a try. You won't be disappointed!
