1 tablespoon ground coriander
1 tablespoon oregano
4 cloves garlic, (minced)
2 Hatch peppers, (chopped (or Anaheims) )

GREEN CHILE NEW MEXICAN STYLE

Green Chile New Mexican Style image

New Mexican Green Chile, of which I prefer Hatch chiles is amazing. Spicy and fresh roasted this chile can't be beat.

Provided by Abbe Odenwalder

Categories     Chile/Soup

Time 1h

Number Of Ingredients 10

3 T vegetable oil
1 large onion chopped (At least 1 c)
3 garlic cloves minced
2 T flour
1 1/ 2 c chopped mild green chiles or use 2 c of your choice of chile
½ c chopped hot green chili
1/2 t ground cumin
Pinch of Mexican oregano
2 c chicken stock (I make this with Better Than Bouillon) Just mix a good spoonful into the hot water or directly into hot soup.
1 t salt - you may want to test as the bouillon does give it a nice degree of saltiness

Steps:

  • Heat oil and add onion. Cook about 5 minutes and add garlic.
  • Cook another minute and stir in flour. Cook for 1-2 minutes stirring so flour doesn't burn and also so that it cooks and you don't get a floury taste.
  • Add chilies. Pour in stock and seasonings. Taste for salt and adjust if necessary.
  • Bring to boil over medium heat and cook for about 15 to 30 minutes on a low simmer covered.
  • If you want it thicker add more broth or water. This can cook for longer if you want your chile a softer texture.

HATCH CHILE VERDE

Hatch Chile Verde image

Hubby and I are Hatch chile fanatics. We buy 50 pounds of roasted Hatch chiles when they are in season. We portion them out and freeze them so they are readily available. This chile verde does not call for tomatillos because I wanted the chiles to be the star of the recipe.

½ cup water
½ teaspoon salt
1 tablespoon oil, or as needed

6 cloves garlic, pressed
1 tablespoon ground cumin
¼ cup all-purpose flour
4 cups chicken broth, or more as needed
1 (14.5 ounce) can diced tomatoes
1 pinch salt and ground black pepper to taste

  • Place Hatch chiles directly on the grates of a gas stove. Cook over medium heat, flipping with tongs occasionally, until blackened and charred, about 5 minutes. Place in a sealed plastic bag and allow to cool, 7 to 8 minutes.
  • Peel off charred skins, remove seeds, and cut 1/2 of the chiles into 1-inch squares. Set aside. Place remaining chiles in a food processor and process until finely chopped. Add processed chiles to chopped chiles. Set aside.

Traditional-Style New Mexico Green Chile Sauce image

Every New Mexican cook has a green chile sauce, but it has to be very good sauce, or her reputation as a good cook suffers. They serve this sauce at any meal. At breakfast it is served over eggs or potatoes. It is used over burritos, in enchiladas, or over grilled meats and roasted potatoes for lunch or dinner. It is best when it is fresh or used within one day of being made. This recipe comes from Sandy Szwarc's "Real New Mexico Chile".

1/2 white onion, cut into med dice
2 t dried Mexican oregano
6 cloves garlic, finely mincerd
1.5 t fosher salt
2 T vegetable oil
3 T all purpose flour

Steps:

  • Place all ingredients except the vegetable oil and flour, in a large saucepan over medium heat. Simmer uncovered, until juice has thickened and is opaque, 20-30 min. Stir occasionally, taking care that the chiles do not burn or stick to the bottom of the pan. In a small bowl, whisk together the oil and flour until smooth and well blended, to form the base for a roux. Place in a saucepan over medium-high heat until hot and bubbling. Reducer the heat to low and whisk constantly until roux is slightly brown and has a nutty flavor. Remove from heat. Add 1/2 c of the green chile mixture to the roux and whisk thoroughly until smooth. Add the roux to the remaining chile mixture and cook over low heat untl the sauce thickens and the flour taste disappears (about 15 min) Add salt to taste. Cool , coer and store in non reactive container in refry until needed up to 4 days. Check that it does not sour. Can be frozen up to 2 mo. To serve, reheat over low heat. VARIATION : CHILE VERDE Prepare sauce as directed. Cut 1 lb pork shoulder in half and trim off fat. Place pork in a saucepan with 2 white onions, quartered, 1.5 t. salt, 2 t cumin seeds, 2 t dried Mexican oregano, 12 whole black peppercorns, and water to cover about 8 cups. Cover and simmer over low heat uti meat is tender, about 1 hr. Drain, and with two opposing forks , shred the meat into long strings, Chop the shredded meat with a cleaver into 1/2 inch lengths and stir into prepared green chile sauce.

Tips:

  • Choose the right chiles: For a medium heat level, use a combination of Anaheim and Poblano peppers. For a hotter sauce, add some Serrano or Jalapeño peppers. Remove seeds and ribs for a milder sauce.
  • Roast the chiles: Roasting the chiles brings out their flavor and smokiness. You can roast them in the oven, on a grill, or over an open flame. If roasting in the oven, place the chiles on a baking sheet and broil them for 5-10 minutes per side, or until they are charred and blistered.
  • Remove the skins from the chiles: Once the chiles are roasted, let them cool slightly, then peel off the skins. This is easiest to do if you use tongs to hold the chiles.
  • Puree the chiles: Place the peeled chiles in a blender or food processor and puree them until smooth. Add a little water or broth if needed to help the blending process.
  • Add other ingredients: In addition to the chiles, you can add other ingredients to your green chile sauce, such as tomatoes, onions, garlic, cumin, oregano, and salt. Start with a small amount of each ingredient and adjust to taste.
  • Simmer the sauce: Bring the sauce to a simmer over medium heat and let it simmer for at least 15 minutes, or until it has thickened to your desired consistency.

Conclusion:

New Mexico green chile sauce is a versatile condiment that can be used in a variety of dishes, from enchiladas and tacos to burritos and soups. It is also a great way to add a pop of flavor to grilled meats and vegetables. With its smoky, slightly spicy flavor, New Mexico green chile sauce is sure to become a favorite in your kitchen.
