32 Ritz Crackers (one sleeve)
6 tablespoons Butter (melted - reserve one tablespoon for buttering the baking dish)
¼ teaspoon salt
½ teaspoon pepper
Lemon & parsley for garnish (optional )

Steps:

  • Preheat oven to 400°F. Grease a baking dish with one tablespoon of melted butter and set aside.
  • If fish is in large pieces, cut it into smaller portion sizes. Season cod fillets with salt and pepper on each side and place them in the baking dish.
  • In a food processor, chop the Ritz crackers until a rough crumb is formed. You don't want them super fine, but processed enough to have some larger pieces.

1 pound uncooked shrimp (26-30 per pound), peeled and deveined
1/2 pound fully cooked Spanish chorizo links, cut into 1/2-inch pieces
1/4 cup dry white wine or chicken broth
1 medium lemon, cut into wedges
1/2 cup butter, melted
4 garlic cloves, chopped
2 teaspoons seafood seasoning
1-1/4 teaspoons Cajun seasoning
1/4 teaspoon pepper
2 tablespoons minced fresh parsley
French bread, optional

Steps:

  • Preheat oven to 400°. Place potatoes in a 15x10x1-in. baking pan. Drizzle with oil and sprinkle with Italian seasoning; toss to coat. Bake until tender, 25-30 minutes. Some modern versions use saltines, others use butter crackers like Ritz, and many enrich the crackers with crab meat. 4 ounces butter-flavored crackers, such as Ritz (about 1½ sleeves; 1½ cups crushed)
5 tablespoons unsalted butter, melted
1/4 cup minced fresh chives
1/4 cup minced flat-leaf parsley
1/2 lemon, zest and juice, plus more lemon wedges for serving
1 teaspoon onion powder
1 teaspoon garlic powder
4 (6- to 8-ounce) fillets of cod, haddock, halibut or other white fish
Coarse kosher salt and black pepper
Sweet paprika, for serving

Steps:

  • Heat the oven to 425 degrees. Put the crackers in a medium bowl and use your hand to crush them until they are finely crushed. (Some coarser bits are OK.)
