This recipe is versatile and can be scaled down or up. It freezes well and tastes best if made 1-2 days ahead.

5 lbs ground beef
5 lbs green peppers, diced
5 lbs red peppers, diced
5 lbs yellow onions, diced
5 garlic cloves, crushed
4 (28 ounce) cans tomato sauce
2 bay leaves
1/2 cup chopped fresh parsley
hot red pepper flakes, to taste
salt and black pepper, to taste
italian seasoning, to taste
20 fresh rolls (torpedo, grinder or any roll that will hold this mixture)

Steps:

  • In a very large stockpot over medium-high heat, brown the ground beef, stirring often.
  • Add the chopped green and red peppers, onions, and garlic; mix well.
  • When the vegetables begin to soften, add the tomato sauce, bay leaves, parsley, hot pepper flakes, salt, black pepper, and Italian seasoning.
  • Cover and simmer, stirring occasionally, for 2-3 hours.

1 Really large onion (rough chopped)
2-3 Green bell peppers (rough chopped)
1 Large can of crushed tomatoes
8 ounce can of tomato sauce
Salt & pepper to taste
Hot peppers: I like an assortment since each add a different layer of flavor. Remove seeds and membranes and finely chop.
Hot sauce: A few good shakes definitely contributes to the overall flavor.
Crushed red pepper flakes: A good shake or two also adds a certain "Je ne sais quoi" to the flavor

Steps:

  • Place ground beef in a large pot, break it up and saute until just pink.
  • Add chopped onions and green peppers
  • Add crushed tomatoes and tomato sauce
  • Bring to a simmer and cook on low heat for at least 1 hour.
  • Once peppers and onions begin to soften, start adding seasonings as desired, tasting as you go.
  • Cook it down until thickened enough to spoon into rolls. I usually serve with a slotted spoon to drain out extra liquid.
  • Serve with a shaker of crushed red pepper flakes on the table because even the hard core heat addicts sometimes want just a little more heat.

3 lbs green bell peppers (diced)
3 lbs yellow onions (diced)
1.5 lbs red bell peppers (diced)
28 oz diced tomatoes (canned)
28 oz tomato sauce (canned)
8 oz tomato paste (canned)
bay leaf
1/2 tsp red pepper flakes
dried oregano & basil (totaling around 1 tbsp)
salt and pepper
hoagie rolls
spaghetti noodles
macaroni noodles
a bunch of shredded cheese
tortilla chips

Steps:

  • Brown the hamburger then remove from pan, leaving rendered fat.
  • Sauté the onion and bell peppers and garlic in the hamburger fat until soft
  • Add diced tomatoes, tomato sauce, bay leaf, red pepper flakes, and cooked hamburger back to the pot. Simmer for an hour, covered.
  • Add tomato paste, oregano, and basil, simmer for 2 more hours uncovered, stirring occasionally. Season to taste, then chill overnight.
  • Reheat in crock pot and serve with hoagie rolls, maybe some potato chips.

4 large onions, chopped (6 cups)

1 jar(s) (small) hunts tomato sauce
1/4 jar(s) (using tomato jar) water
2 Tbsp crushed red pepper
1 tsp oregano
1 tsp basil

3 large yellow onions, cut into strips

1 (1/4 inch x 3 inch) strip red bell pepper, seeded and diced
1 medium yellow onion, chopped
1 medium red onion, chopped

1 teaspoon red pepper flakes, or to taste
8 torpedo rolls, split

Steps:
