CORN AND CLAM CHOWDER WITH ZUCCHINI AND HERBS
Summer corn and clam chowder is like a clambake in a bowl, emphasizing the sweetness of each ingredient. To give the chowder a somewhat Italian slant and to magnify the corn flavor, a handful of polenta is used to thicken the broth slightly, as is the case with certain Tuscan vegetable soups. Steam your own clams, if possible, or buy chopped clams from the fishmonger.

Steps:
- Set up a clam steamer, or put about 2 inches of water in a large pot with a lid, place over high heat and bring to a boil.
- Steam open clams over high heat, covered. Large clams will take about 12 minutes. When cool, shuck the clams. Strain and reserve all clam broth, leaving any sand or grit in the bottom of the pot. Chop meat roughly and set aside. To save time, do this step in advance. (If using chopped clams, skip Step 1 and 2.)
- Put olive oil in a heavy-bottomed soup pot over medium-high heat. Add onions and celery, season generously with salt and pepper and cook until softened, 5 to 8 minutes.
- Add garlic, red pepper and thyme. Stir and let sizzle briefly, then add polenta and stir to coat. Gradually add the water, stirring constantly with a wire whisk as mixture begins to thicken, then add clam broth and bring to a boil. It should now look brothy and just barely thickened.
- Reduce heat to a simmer and cook for 30 minutes, until polenta grains have softened.
- Add potatoes to pot and simmer until just done, 12 to 15 minutes. Taste soup and adjust seasoning. Add more clam broth, if necessary.
- Add corn and zucchini and simmer 5 minutes until zucchini is tender. Add chopped clams and cook 2 minutes more.
- To serve, ladle soup into individual bowls. Squeeze some lime juice into each portion and top with a dollop of crème fraîche. Sprinkle with parsley and oregano.

CONTEST-WINNING NEW ENGLAND CLAM CHOWDER
This is the best New England clam chowder recipe, ever! In the Pacific Northwest, we dig our own razor clams and I grind them for the chowder. Since these aren't readily available, the canned clams are perfectly acceptable. -Sandy Larson, Port Angeles, Washington

Steps:
- In a large pot over medium-high heat, heat 1 tablespoon of the olive oil. When the oil is hot, add ¼ cup of the wine and, working in batches, steam 2 dozen of the clams. Cover and cook, shaking the pot frequently, until the clams have opened, 8 to 10 minutes. As the clams open, transfer them and their juices to a large bowl. Discard any clams that do not open. When the clams are cool enough to handle, remove them from their shells and coarsely chop the meat. Set aside. Pour the cooking liquid from the pot through a fine strainer into another bowl (you should have about 2 cups; add water if needed). Set aside.
- Wipe the pot clean, add the bacon and place over medium heat. Cook, stirring often, until the fat begins to render and the bacon is crisp, 8 to 10 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate to drain. If the pan looks dry, add the remaining 1 tablespoon of olive oil. Add the onions, shallots and garlic, and season with salt and pepper. Cook, stirring often, until soft and brown, 12 to 15 minutes. Add the remaining ¼ cup of wine and reduce the heat; cook for 2 to 3 minutes. Add the corn and cook for another 6 to 8 minutes. Add the cream, water, jalapeño, cayenne, sugar and reserved clam liquid.
- Using kitchen twine, tie the thyme, rosemary and bay leaf together to make an herb bundle then add it to the soup. Cook over medium heat until the cream has reduced by a third, 15 to 20 minutes. Remove from the heat and discard the jalapeños and herb bundle.
- Using a blender or a hand blender, purée the soup until smooth. Return to low heat, add the potatoes and cook until almost tender, 6 to 8 minutes. Add the clam meat and remaining dozen clams in their shells.
- Cover and cook until the clam shells pop open, 8 to 10 minutes. Once the shells are open, taste and adjust the seasoning.
- Ladle the chowder among bowls and garnish with the parsley, chives, tarrago, reserved bacon and drizzle of olive oil before serving.

BEST NEW ENGLAND CORN CHOWDA (CHOWDER)
This is how my mother made her chowder for years, and it was always greeted with pleasure and delight from anyone partaking in in. Even my Aunt who has always hated Corn Chowder loved this recipe. You can use fresh corn if you prefer, but may want to add it in with the potatoes to cook, and if you must use canned corn, watch the salt. Canned corn will change the flavor greatly.

Steps:
- Fry bacon until crisp.
- Remove from pan with a slotted spoon and drain; set aside.
- In a 4-quart saucepan or pot, heat 2 tablespoons of the bacon fat and add chopped onion.
- Cook over medium heat until onion is translucent.
- Add broth and cubed potatoes to pan (add some salt if you are using a less salty broth).
- Bring to a simmer, cover and allow to cook for about 10 minutes (this is for 1 inch cubes of potatoes).
- Stir in corn and heat through.
- Add cream and heat through again.
- If you prefer a thicker chowda, mix 2 tablespoons all-purpose flour with 1/2 cup of milk and shake until dissolved.
- Add a little at a time while the chowda is simmering until it reaches the desired consistency.
- Serve with crumbled bacon on top, a good dose of freshly ground pepper, and for those of you who want true authenticity, add a dollop of butter to the top of the steaming bowl.
Tips:
- Select Fresh Clams: Opt for live, hard-shelled clams that are tightly closed. Discard any with open or cracked shells.
- Properly Clean Clams: Scrub the clam shells thoroughly to remove any dirt, sand, or grit. Rinse them well under cold water.
- Use Quality Corn: Fresh corn kernels offer the best flavor. If using canned corn, drain and rinse it thoroughly before adding it to the chowder.
- Cook the Bacon Until Crispy: Crispy bacon adds a smoky, savory flavor to the chowder. Cook it until it's nice and crispy, then drain on paper towels.
- Sauté the Vegetables: Sautéing the vegetables, including onions, celery, and garlic, enhances their flavor and contributes to the chowder's overall depth of flavor.
- Use a Good Quality Broth: A flavorful broth is essential for a delicious chowder. Use a combination of clam juice and chicken broth or vegetable broth for a rich and savory base.
- Simmer, Don't Boil: Bring the chowder to a simmer and maintain a gentle simmer throughout the cooking process. Boiling can toughen the clams and vegetables.
- Add Herbs and Seasonings: Enhance the chowder's flavor with a blend of herbs and seasonings, such as thyme, bay leaf, salt, and pepper. Adjust the seasonings to your taste.
- Add Corn and Clams Last: Add corn and clams towards the end of the cooking process to prevent overcooking. Simmer just until the clams are opaque and the corn is heated through.
- Serve with Fresh Herbs and Crackers: Garnish the chowder with fresh herbs like parsley or chives for a pop of color and flavor. Serve with crackers, crusty bread, or oyster crackers for dipping.
Conclusion:
New England Clam and Corn Chowder is a hearty, comforting dish that showcases the flavors of fresh clams, sweet corn, and aromatic herbs. By following these tips and using quality ingredients, you can create a delicious and satisfying chowder that is perfect for a cozy meal or special occasion. Whether you enjoy it as a main course or a side dish, this classic chowder is sure to impress your family and friends.
