NEW ENGLAND INDIAN PUDDING

New England Indian Pudding image

This recipe was inspired by traditional New England Indian pudding. My version is made in the slow cooker instead of being baked for hours in the oven. If the molasses flavor is too strong, cut the amount to 1/3 cup. -Susan Bickta, Kutztown, Pennsylvania

SIMPLE BREAD PUDDING

Simple Bread Pudding image

This recipe is proof-positive that leftover bread can easily be converted to dessert without much work. There's room for customization here: consider adding fresh or dried fruit or a combination of spices like cinnamon, nutmeg, allspice and cardamom. It makes a great brunch dish, served with fresh fruit compote. Or add a handful of chocolate chips before baking for a decidedly more decadent outcome.

Categories     easy, editors' pick, dessert

Time 45m

Yield 6 to 8 servings

Number Of Ingredients 7

2 cups milk
2 tablespoons (1/4 stick) unsalted butter, more for greasing pan
1 teaspoon vanilla extract
1/3 cup sugar
Pinch salt
1/2 loaf sweet egg bread like challah or brioche, cut into 2-inch cubes (about 5 to 6 cups)
2 eggs, beaten

Steps:

  • Heat oven to 350 degrees. In a small saucepan over low heat, warm milk, butter, vanilla, sugar and salt. Continue cooking just until butter melts; cool. Meanwhile, butter a 4-to-6-cup baking dish and fill it with cubed bread.
  • Add eggs to cooled milk mixture and whisk; pour mixture over bread. Bake for 30 to 45 minutes, or until custard is set but still a little wobbly and edges of bread have browned. Serve warm or at room temperature.

Tips:

  • Use stale bread: Stale bread absorbs more custard, resulting in a richer, more flavorful bread pudding.
  • Don't overmix the batter: Overmixing the batter can result in a tough, dense bread pudding. Mix just until the ingredients are combined.
  • Use a variety of bread: Feel free to use a variety of bread types in your bread pudding, such as white bread, wheat bread, or even croissants.
  • Add mix-ins: Get creative and add your favorite mix-ins to your bread pudding, such as raisins, nuts, chocolate chips, or dried fruit.
  • Bake until the center is set: The center of the bread pudding should be set but still slightly wobbly when you remove it from the oven. This will ensure that the bread pudding is cooked through but not overcooked.

Conclusion:

New England bread pudding is a classic dessert that is easy to make and always a crowd-pleaser. With its simple ingredients and delicious flavor, it's a perfect way to use up leftover bread. Whether you enjoy it warm with a scoop of ice cream or cold for breakfast, New England bread pudding is a versatile dish that can be enjoyed in many ways. So next time you have some stale bread on hand, give this recipe a try. You won't be disappointed!
