NEVER-FAIL EGG NOODLES
Some 30 years ago, the small church I attended held a chicken and noodles fund-raiser supper. I was put in charge of noodles for 200 people! A dear lady shared this recipe and said it had been tried and tested by countless cooks. These noodles are just plain good eating! -Kathryn Roach, Edgemont, Arkansas

Steps:
- 1. Beat egg and yolks until light and fluffy. Add water and salt mix. Stir in flour then turn out onto a lightly floured counter and knead until smooth. This could take up to 5 minutes, don't give up it will be worth it. Cover the dough with a damp towel and let rest for 10 minutes
- 2. Roll out the dough to about 1/8th inch thick or however you like them. Cut your noodles to desired size. If you don't have a pasta machine just use your pizza cutter. At this point you can cook the noodles, or let them dry over night and then put them in plastic bags and freeze for up to one month.
- 3. In a large pot bring your water to a boil, add some salt to the water. Boil the noodles for 3 to 5 minutes. Then serve with butter or your favorite sauce. If you want chicken and noodles boil in the chicken broth.
Tips:
- Use the right flour: All-purpose flour is the best choice for egg noodles. It has a high protein content, which gives the noodles a chewy texture.
- Make sure the dough is well-rested: Resting the dough allows the gluten to relax, which makes the noodles more tender.
- Don't overwork the dough: Overworking the dough will make the noodles tough.
- Use a pasta maker or a rolling pin: If you have a pasta maker, use it to roll out the dough. If you don't have a pasta maker, you can use a rolling pin. Just be sure to roll the dough out evenly.
- Cook the noodles in boiling water: Bring a large pot of water to a boil and add the noodles. Cook the noodles for 3-4 minutes, or until they are tender.
- Rinse the noodles with cold water: After cooking the noodles, rinse them with cold water to stop the cooking process.
- Serve the noodles with your favorite sauce: Egg noodles can be served with a variety of sauces, such as a simple butter and Parmesan sauce, a tomato sauce, or a pesto sauce.
Conclusion:
Egg noodles are a delicious and versatile dish that can be enjoyed by people of all ages. They are easy to make and can be served with a variety of sauces. So next time you're looking for a quick and easy meal, give egg noodles a try.
