Steps:

  • On a lightly floured surface and using a lightly floured rolling pin, roll out a disk of dough into a circle about ¼-inch thick. Starting at one end, gently roll up the dough onto the rolling pin. Unfurl the dough over a 9-inch pie plate, preferably ceramic, and press it in lightly, making sure it's lining the plate.
  • Trim so that there's about ½ inch of excess dough hanging over the edge of the pie plate. (If the dough feels warm, refrigerate it for 15 minutes.) Use a small brush to evenly paint egg wash on the edge of the crust. Cut a square of parchment paper and use it to line the crust. Fill with pie weights (or dried beans) up to the top edge. Place the plate on a baking sheet lined with parchment or foil.
  • Transfer the baking sheet to the oven, placing it directly on the baking stone if using. Bake crust until the outer edge is just starting to turn golden brown, 12 to 15 minutes. Remove the parchment and pie weights, and continue to bake until the base appears set, 2 to 4 minutes more. If the dough puffs up anywhere, you can puncture it with a fork. Cool the crust completely. Reduce the oven temperature to 400 degrees.
  • Make the blackberry filling: Mix the blackberries and 2 tablespoons sugar in a medium pot over medium heat. Cook, stirring occasionally, until the berries begin to break down, 8 to 10 minutes. Mash with a potato masher or large fork until the mixture resembles a coarse purée. You should have 1 ¾ cup (if you have more or less, see Note below).   • Make the raspberry filling: Mix the raspberries and 2 tablespoons sugar in a medium pot over medium heat. Cook, stirring occasionally, until the berries begin to soften and break down, about 3 to 5 minutes. Mash until the mixture resembles a coarse purée. You should have 2 cups of purée (if you have more or less, see Note). In a small bowl, whisk the remaining sugar and cornstarch to combine. Take care to fill just to the inner edge of the crust (you may have leftover filling). The fillings should be thick enough that they stay where you put them, but a small amount of spreading is normal. Use the tip of a knife to swirl the fillings wherever they meet, then use a small offset spatula or a silicone spatula to spread them evenly flat.
  • Place the pie plate on a parchment- or foil-lined baking sheet and transfer it to the 400-degree oven, placing directly on top of the baking stone if using. Bake until the crust is golden brown and the filling appears evenly set on the surface, 35 to 40 minutes; start checking the pie after 30 minutes of baking to be sure it doesn't bubble over. When ready, the surface will form a skin and look set, but it will move slightly when the pie is wiggled. If the crust or the surface of the berries begin to look too dark, tent the pie with foil in the last 5 to 10 minutes of baking.
  • Let pie cool completely on a rack, at least 5 hours, before serving. The pie is best the day it is baked; store leftovers at room temperature, wrapped tightly in plastic wrap.

1 your favorite pie crust, top and bottom crust. chilled
2 bag(s) 16 oz bags of frozen mixed berries (blackberries,raspberries and blueberries)
1 c sugar
1/4 c cornstarch (you can use less to make pie have a more runny consistancy)
lemon juice
cinnamon sugar

Steps:

  • 1. Preheat your oven to 425 degrees.
  • 2. Using a wire whisk combine sugar and cornstarch.
  • 3. Add berries to the sugar mixture and toss to coat all berries
  • 4. Place the berries into the bottom pie crust and sprinkle with lemon juice.
  • 5. Cover with top crust and pinch edges. Cut a few slits into top.
  • 6. Cool pie in frig for about 20 minutes or so
  • 7. Bake pie in oven for 20 minutes. After 10 minutes Brush top and edges of pie with melted butter and sprinkle all over and out to edges of crust with cinnamon sugar and then turn pie in oven. Contine at 425 for another 10 minutes.
  • 8. Turn your oven down to 375 degrees and continue baking pie until the pie starts to brown up and the filling is bubbly through the slits in the pie. (cover areas that look like they are getting to dark with tin foil)
  • 9. Remove pie from oven and cool 30 minutes before serving. If you are like my family we like it chilled for several hours : ) ENJOY with some cool whip on top! YUM

This pie is my own creation after visiting the market and seeing beautiful berries and peaches for sale. After experimenting with different fruits and sugar levels, I have put together a fresh berry and peach pie that just screams 'summer is here!'

1 pastry for a 9 inch double crust pie
1 egg white, lightly beaten
3 fresh peaches - peeled, pitted, and sliced
1 pint fresh strawberries, hulled and large berries cut in half
1 pint fresh blueberries
2 (6 ounce) containers fresh raspberries
⅓ cup all-purpose flour
3 tablespoons cornstarch
½ cup brown sugar
½ cup white sugar

Steps:

Really, I just made this up a few days ago, and it resulted in one of the most amazing pies I've ever eaten. I usually am very critical and not completely happy with recipes I come up with on my own, but this one is truly a sensation!

2 unbaked pie crusts (I make my own, store-bought works great too)
4 cups strawberries, washed and sliced
2 cups raspberries, rinsed
1 cup blackberry, rinsed
1/2 cup brown sugar
1/2 cup granulated sugar
1/4 cup cornstarch
1 teaspoon cinnamon
1/4 teaspoon salt
1 orange, zest of

Steps:

  • Preheat oven to 400. Combine the berries with a 1/4 cup of sugar and let stand over a sieve for a half hour to drain some of the liquid. Combine the rest of the ingredients minus the crust. Using a 9 inch pie plate, arrange your crust and spoon the filling inches Place the second crust over and crimp edges. Make sure to cut a vent into the dough or use a pie bird. You can also do a lattice top pie which is just gorgeous and is what I did.
  • You can brush the top of the pie with a mix of one egg yolk and a teaspoon of water (which makes for a lovely golden brown crust).
  • Bake for 20 minutes at 400 and then bake at 350 for another 40-50 minutes. Remove when crust is golden brown.

Tips:

  • Use fresh fruit: Freshly picked berries will give your pie the best flavor. If you can't find fresh berries, frozen berries can also be used. Just be sure to thaw them completely before using.
