Categories     Lettuce Salads

Time 15m

2 ripe pears, peeled and sliced thinly (peeled is how my family likes it; if yours doesn't mind, the peeling is fine)
1 pkg spinach, washed and de-stemmed
1/3 c dried cherries (dried cranberries are a good substitute)
1/2 c pecans, roasted and chopped
1/2 c freshly squeezed citrus juice (1 lemon and 1-2 oranges)
3/4 c good olive oil
2 tsp dijon mustard
2 tsp local honey
1 1/2 Tbsp champagne or white wine vinegar
1/2 tsp kosher salt
1/4 tsp freshly ground black pepper
4 oz crumbled goat cheese (optional) i serve this onthe side so those who don't want the cheese don't have to eat it.

Steps:

  • 1. In a small bowl, whisk together the citrus juice, olive oil, honey, vinegar, salt, and pepper. Taste dressing and correct to taste. Pour half of dressing over pears in bottom of salad bowl. SPINACH AND CLEMENTINE SALAD WITH DRIED TART CHERRIES

Spinach and Clementine Salad With Dried Tart Cherries image

From www.aicr.com. Clementines can be both expensive and difficult to find as they are only available November through March. Substitute tangerines-honey tangerines being particulatiry good, if you cannot find them. Here is what I found online about the fruit: "Clementines are the tiniest of the mandarins. Imported from Spain, Morocco, and other parts of North Africa, clementines are a cross between a sweet orange and a Chinese mandarin. They are small, very sweet, and usually seedless. Most people think of clementines as small tangerines, but they're a different variety entirely, with a distinctive taste".(SOURCE:www.producepete.com/shows/clementines.html

A mix of juicy pears, sweetened nuts, dried cherries, and feta cheese makes this is a show-stopping sweet salad! The taste and colors will impress! You may add more of the pear syrup to the dressing to make it thinner, or increase the amount of yogurt for creamier results.

SPINACH SALAD WITH DRIED CHERRIES

Spinach Salad With Dried Cherries image

I love spinach salads, dijon mustard and dried cherries so this was a hit with me from the get go. It's a Martha Stewart recipe and absolutely rocks! You could easily substitute dried cranberries, but the tartness of the cherries are amazing. Enjoy! Note: prep time includes time for toasting pumpkin seeds.

Categories     Salad     Side     Spinach     Raw

Yield 4 to 6 servings

Number Of Ingredients 17

Citrus Vinaigrette
1/2 cup extra-virgin olive oil
1 teaspoon grated lemon zest
1 teaspoon grated orange zest
2 tablespoons freshly squeezed lemon juice
1 tablespoon freshly squeezed orange juice
1 teaspoon fresh thyme leaves, chopped
1 teaspoon honey
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Spinach Salad
1 (10-ounce) bag of spinach (about 6 cups)
2 oranges, cut into segments (see Note)
1/2 cup sliced almonds, toasted (see page 168)
1/2 red onion, thinly sliced
Salt and freshly ground black pepper
Parmesan Frico (page 229)

Steps:

  • Combine all the ingredients for the Citrus Vinaigrette in a jar or a tight-sealing plastic container. Shake to blend.
  • Combine the spinach, orange segments, almonds, red onion, salt, and pepper in a large bowl. Toss with the Citrus Vinaigrette. Serve on individual plates, topped with 1 or 2 Parmesan Frico.
  • Note
  • To cut orange segments, first use a small sharp knife to cut off the top and bottom of the orange. Stand the orange on one of the cut ends and make long, straight cuts to slice away all of the peel and white pith. Hold the peeled orange in your palm and cut on each side of the membranes to free the segments.

Tips:

  • Use fresh, ripe ingredients: The better the quality of your ingredients, the better your salad will taste. Look for fresh spinach, pears, and dried cherries.
  • Don't overdress the salad: A little bit of dressing goes a long way. Too much dressing will weigh down the salad and make it soggy.
  • Massage the spinach: Massaging the spinach with your hands helps to break down the fibers and make it more tender.
  • Toast the nuts: Toasting the nuts adds a nice nutty flavor to the salad.
  • Serve the salad immediately: This salad is best enjoyed fresh. Don't let it sit for too long before serving.

Conclusion:

Nell's Superb Spinach, Pear, and Dried Cherry Salad with Citrus Vinaigrette is a delicious and refreshing salad that is perfect for any occasion. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a healthy and flavorful salad, give this one a try. You won't be disappointed!
