1/2 cup sugar
1 teaspoon pure vanilla extract
3 large peaches, pitted and sliced into 1/2-inch-thick wedges
Juice of 1/2 lemon
1/2 teaspoon cornstarch
2 cups low-fat Greek yogurt

Steps:

  • Add the sugar, vanilla, peaches and lemon juice to a large saucepan over medium-high heat. Stir until the sugar begins to melt, 1 to 2 minutes. Cover, reduce the heat to medium and simmer 5 minutes.

5 large ripe peaches, peeled, pitted and chopped
1/4 cup water
1 (12-ounce) can peach nectar
1 cup sugar
4 ounces sour cream
1 pint heavy cream
1/4 teaspoon vanilla extract
2 teaspoons lemon juice
Praline Pecan Sauce, recipe follows
2 1/2 cups chopped pecans
1 cup light brown sugar
1 cup light corn syrup
1 stick butter, melted
1/4 teaspoon salt
1 teaspoon vanilla extract

Steps:

  • Place chopped peaches into a saucepan. Add water and a can of peach nectar. Cook over medium heat until soft and cooked through, about 10 minutes. Remove from heat and drain peach juice. Place peaches into a large bowl; add sugar and allow to cool to room temperature.
  • Add sour cream, heavy cream, vanilla extract and lemon juice to the bowl with the peach mixture. Using an emersion blender mix together to incorporate. (If you do not have an emersion blender, a food processor works just as well.) Remove ice cream insert from the freezer and turn the machine on. 4 hibiscus tea bags
1 cup superfine sugar
1 bunch mint leaves, reserve 10 sprigs, for garnish
2 cups sweet tea vodka, chilled (recommended: Firefly)
2 lemons, sliced
Crushed ice
Mint, for garnish

Steps:

  • Bring the water to a boil in a large pot over medium heat. Add the tea bags and turn off the heat. Let steep for 10 minutes. Remove the tea bags, stir in sugar and let cool completely.

6 peaches, halved and pitted
1 vanilla bean, split lengthwise and seeds scraped
1 tablespoon/15ml loose green or black tea leaves or 4 tea bags
Split vanilla beans, for garnish

  • Bring 3 cups (750ml) water and the sugar to a boil in a pot. Add the peaches and vanilla bean (including the seeds). Simmer over medium heat for about 30 minutes.
  • Discard the vanilla bean. Pour the peaches and syrup into a blender and puree until smooth. Strain the peach puree through a sieve into a pitcher.

5 ripe peaches , 4 stoned and chopped, 1 sliced to serve
4 teabags

Steps:

  • Tip the sugar into a pan with 250ml water. Bring to the boil slowly, ensuring the sugar is fully dissolved. Add the chopped peaches and cook until very soft. Remove from the heat, mash the peaches with a fork, and leave to infuse for 1 hr.
