Scrumptious- perfect on a chilly fall evening! I found this on a South Beach Diet Message Board, and I wish I knew who to credit for it- this is a favorite dish of my husband's.

Number Of Ingredients 8

2 (16 ounce) cans of large butter beans (or lima beans)
1 (8 ounce) can tomato sauce
4 carrots, peeled & shredded
0.5 (12 ounce) bag frozen spinach
1 small onion, peeled and diced
1/2 cup chopped fresh thyme (or dried equivalent)
1 tablespoon crushed garlic
9 ounces andouille sausages, sliced on an angle (I substitute turkey sausage to bring the fat down)

Steps:

  • In a med. stock pot, bring all ingredients to a boil. Season with salt & pepper to taste.
  • Reduce heat and simmer for 30 minute or until beans are tender and sausage has shrunk to small disks. Serve hot.

3 turkey (or chicken) andouille sausage links (about 3 oz each), sliced on an angle
1 can (16 oz) large butter beans (or lima beans)
1 can (10 oz) whole tomatoes
4 carrots, peeled and shredded
1 small onion, cubed
1/2 cup chopped fresh thyme leaves
1 tbsp crushed garlic

Steps:

  • In a medium stockpot, bring all ingredients to a boil. Salt and pepper to taste. Reduce heat and simmer 30 minutes or until the beans are tender and the sausage has shrunk to small disks. Serve hot.

14 ounce(s) andouille sausage, sliced 1/4 inch
2 tablespoon(s) extra virgin olive oil
3/4 cup(s) red, orange, yellow bell peppers, chopped
1 medium white onion, chopped
4 medium garlic cloves, chopped
1/2 cup(s) celery, chopped
48 ounce(s) great northern beans and liquid
2 large bay leaves
1/2 teaspoon(s) thyme, dried
2 teaspoon(s) creole seasoning
1 tablespoon(s) sriracha
2 dash(es) liquid smoke flavoring
3 cup(s) yellow rice cooked, according to package-add a of pinch saffron
2 tablespoon(s) italian parsley, chopped

Steps:

  • Add olive oil to a 5 quart heated stock pot or Dutch oven. Sauté sausage slices for 5 minutes or until golden brown. Add peppers, onion, garlic and celery. Sauté until translucent.
  • Add remaining ingredients to pot. Simmer for 45-50 minutes or so.
