Steps:
- Add olive oil to a 5 quart heated stock pot or Dutch oven. Sauté sausage slices for 5 minutes or until golden brown. Add peppers, onion, garlic and celery. Sauté until translucent.
- Add remaining ingredients to pot. Simmer for 45-50 minutes or so.
- Oil a 4 inch bowl with olive oil. Place cooked rice in bowl. Place rice bowl in the middle of a serving platter or bowl. Lift rice bowl and add beans around rice. Garnish with parsley. Enjoy!
Tips:
- Soak the dried beans overnight or for at least 8 hours before cooking. This will help to reduce the cooking time and make the beans more tender.
- Use a heavy-bottomed pot or Dutch oven for cooking the beans. This will help to distribute the heat evenly and prevent the beans from sticking.
- Add the andouille sausage to the pot along with the beans. This will help to infuse the beans with flavor.
- Season the beans with Creole seasoning, salt, and pepper to taste. You can also add other spices, such as garlic powder, onion powder, or cayenne pepper, if desired.
- Bring the beans to a boil, then reduce the heat to low and simmer for 1-2 hours, or until the beans are tender. Be sure to stir the beans occasionally to prevent them from sticking.
- Serve the beans over rice or with cornbread. You can also add a dollop of sour cream or yogurt for extra flavor.
