Time 1h45m

Number Of Ingredients 17

1/4 Cup olive oil
3 lb large cans Tomatoes whole, peeled or crushed
18 oz canned Tomato Paste
1 Tablespoon parsley
2 cloves or 3 garlic chopped or crushed
1 Tablespoon Oregano
2 tsp . garlic salt
1 tsp . ground black pepper
1/2 Cup Romano cheese grated.
2 lbs ground beef
1 1/2 lbs ground pork
3/4 tsp . ground black pepper
1 Tablespoon garlic salt
2 Tablespoon chopped parsley
1/4 Cup grated Romano Cheese
3 eggs
3/4 Cup bread crumbs

Steps:

  • Make the sauce
  • Put olive oil in pan, chop or crush cloves of garlic in oil, heat slowly, do not let burn or turn brown.
  • Add tomatoes (I crush with my hand while adding them) garlic salt, paste, parsley, oregano, pepper & Romano cheese and bring to a simmer and let simmer for at least 1 1/2 hrs. (6 qt. pan works.)
  • Make the Meatballs
  • Put meat & pork in large bowl. Add pepper, salt, parsley, & cheese.
  • Mix thoroughly. Add eggs & bread crumbs, mix until well blended. Oil hands and make into balls, whatever size you like, and don't squish them to death, just medium to lightly form into balls.
  • Put oil in the frying pan & brown slowly (don't let them get crusty). Then drain them and put in the Spaghetti Sauce, and continue cooking them in the sauce.
  • We like Italian sausages too, and cook them the same way & add to sauce.
  • This makes about 24 large, 36 medium or 48 small.
  • Serve with pasta of your choice, and crusty Italian Bread or Rolls, we like Garlic Bread.

Yield 4

Number Of Ingredients 23

1 tablespoon olive oil
½ pound ground beef
1 teaspoon ground cumin
1 ½ tomatoes, chopped
⅓ onion, chopped
¼ bell pepper, diced
3 cloves garlic, minced
1 ½ tomatoes, quartered
⅔ onion, chunked
¼ bell pepper
⅓ cup water, or as needed
1 tablespoon vinegar
3 cloves garlic
2 teaspoons Worcestershire sauce
2 teaspoons dried basil
2 teaspoons dried oregano
2 teaspoons dried parsley
2 teaspoons dried cilantro
2 teaspoons paprika
1 teaspoon soy sauce
1 teaspoon hot sauce (such as Tabasco® Chipotle Pepper Sauce)
1 teaspoon brown sugar
salt to taste

Steps:

  • Heat oil in a saucepan over medium heat. Add ground beef and cumin; cook and stir until meat is browned lightly, 5 to 10 minutes. Stir in chopped tomatoes, chopped onions, diced bell pepper, and minced garlic; cook and stir until meat is browned and vegetables are soft, 5 to 7 minutes.
  • Combine quartered tomatoes, chunked onion, bell pepper, water, vinegar, garlic cloves, Worcestershire sauce, basil, oregano, parsley, cilantro, paprika, soy sauce, hot sauce, brown sugar, and salt in a blender; blend sauce to desired thickness. Add more water if a thinner sauce is desired.

Tips:

  • Use fresh, ripe tomatoes: This will give your sauce the best flavor. If you can't find fresh tomatoes, you can use canned tomatoes, but make sure to choose high-quality tomatoes that are packed in juice, not water.
  • Don't overcrowd the pan: When you're cooking the tomatoes, don't overcrowd the pan. This will prevent the tomatoes from cooking evenly and will make the sauce watery.
  • Simmer the sauce for at least 30 minutes: This will allow the flavors to develop and deepen. The longer you simmer the sauce, the better it will taste.
  • Season the sauce to taste: Once the sauce is cooked, taste it and adjust the seasonings as needed. You may want to add more garlic, oregano, basil, or salt and pepper.
  • Serve the sauce over your favorite pasta: Spaghetti is a classic choice, but you can also use other types of pasta, such as penne, rigatoni, or fettuccine.

Conclusion:

Nanny's spaghetti sauce is a simple but delicious recipe that is perfect for a weeknight meal. It's made with fresh, ripe tomatoes, garlic, oregano, basil, and salt and pepper. The sauce is simmered for at least 30 minutes, which allows the flavors to develop and deepen. Serve the sauce over your favorite pasta and enjoy!
