In my opinion, this is the absolute best banana bread out there. I got it through a mail order recipe club called "Grandma's Kitchen". It is so easy to make, and it seems like everyone always has some ripening bananas that they're trying to get rid of!

5 tablespoons butter
1/2 cup granulated sugar
1/2 cup firmly packed light brown sugar
1 large egg
2 egg whites
1 teaspoon vanilla extract
2 ripe mashed bananas
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1/2 cup heavy cream
1/2 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees, and spray bottom of a 9 inch round pan with non-stick cooking spray.
  • Beat butter in a large bowl with an electric mixer until light and fluffy.
  • Add granulated Sugar and brown sugar; Beat until well blended.
  • Add egg, egg whites and vanilla; blend.
  • Mix in the mashed bananas, and beat the mixture on high speed for 30 seconds.
  • In a separate bowl, combine flour, baking soda, salt and baking powder.
  • Add flour mixture to butter mixture alternately with the cream, ending with the flour mixture.
  • Mix in the walnuts.
  • Pour batter evenly into prepared 9 inch round pan (or loaf pan).
  • Bake until golden brown, and toothpick inserted near the center comes out clean (About one hour).

  • Preheat oven 350. Grease bottom only of 9x5x3 inch loaf pan.
  • Beat butter in large bowl with a mixer on medium speed until light and fluffy. Add brown and granulated sugar beat well. Add egg, egg whites and vanilla; beat until well blended. Add mashed bananas, and beat on high speed.

¾ cup brown sugar

1 3/4 cups all-purpose flour (see Cook's Note)

1/4 teaspoon freshly grated nutmeg
2 large eggs, lightly beaten
1/4 cup buttermilk, sour cream or yogurt
1/2 cup light brown sugar, lightly packed

4 soft, very ripe, darkly speckled medium bananas, mashed (about 1 1/2 cups)

1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
3 very ripe bananas (about 1 lb.)
1 teaspoon fresh lemon juice
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup firmly packed light brown sugar
1/2 teaspoon vanilla extract
2 large eggs
1/4 cup buttermilk

Steps:

  • Preheat oven to 350°. Sift together first 4 ingredients in a large bowl. Mash bananas with lemon juice in a small bowl. (You want a little texture-like semi-lumpy mashed potatoes.)
  • Beat butter and next 3 ingredients at low speed with a heavy-duty electric stand mixer 1 minute or until combined. Increase speed to medium, and beat 1 1/2 to 2 minutes or until light and fluffy. Add eggs, 1 at a time, beating until blended after each addition, stopping to scrape bowl as needed.
  • Add flour mixture to butter mixture alternately with buttermilk, beginning and ending with flour mixture. Beat at low speed just until blended after each addition. Add banana mixture, beating just until batter is blended (no more than 10 seconds). Pour batter into a well-buttered and floured 8- x 4-inch loaf pan, and place on a baking sheet.
  • Bake at 350° for 55 to 60 minutes or until a long wooden pick inserted in center comes out clean. Cool in pan on a wire rack 10 minutes. Remove from pan to a wire rack, and cool 50 minutes. Wrap in plastic wrap (it will still be warm-this helps the bread stay moist), and store at room temperature up to 4 days.

It uses instant milk powder, something I have never seen in any other banana bread recipes. I am adding this to the large group of recipes on Zaar to keep this safe and in the family.

3 tablespoons instant milk
1/2 teaspoon baking soda
1/3 cup shortening (I always used butter but I think she used Crisco)
2/3 cup sugar
1 egg
1/3 cup water
1 teaspoon vinegar
1 cup mashed banana

  • Mix shortening, sugar and egg together.
