3 large sweet potatoes (about 1 1/2 pounds)
2 large eggs
1 1/2 cups granulated sugar
1 stick unsalted sweet butter, at room temperature
1 can evaporated milk
1 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
1 9-inch pie shell

5 tablespoons unsalted butter, softened
1/2 cup packed light brown sugar, plus more if needed
1 cup evaporated milk
2 large eggs
1 tablespoon sugar
1/2 teaspoon table salt
2 1/4 cups all-purpose flour, plus more for rolling
1 cup (8 ounces) cold unsalted butter, cut into 1/2-inch cubes
