2 tablespoons shortening
1 ½ cups white sugar
2 eggs, beaten
2 cups milk
1 teaspoon baking soda
4 cups all-purpose flour
2 teaspoons cream of tartar
1 pinch salt
1 cup chopped walnuts

Steps:

  • Cream shortening with sugar. Mix in eggs. Dissolve soda in milk, and add to the creamed mixture. Stir in flour, cream of tartar, and salt. Stir in nuts.
  • Pour batter into a 3 pound coffee can, or several 1 pound soup cans; fill containers 1/2 to 3/4 full.
  • Bake at 350 degrees F (175 degrees C) for 1 hour, or until a tester inserted in the center of loaf comes out clean.

1 1/3 cups all-purpose flour
1/2 cup artificial sweetener, Splenda Granular
1 teaspoon baking powder
1/2 teaspoon baking soda
1 pinch salt
1 1/4 cups mashed bananas
1 tablespoon canola oil
1/3 cup 2% buttermilk
2 teaspoons vanilla
1/4 cup walnuts, chopped

Steps:

  • Preheat oven to 350 degrees F. Spray a 9X5-inch loaf pan with nonstick cooking spray. Set aside.
  • Blend the dry ingredients in a large mixing bowl. Set aside.
  • Add oil, buttermilk and vanilla to the mashed bananas. Mix well. Pour banana mixture into dry ingredients. Stir until just mixed.
  • Add chopped walnuts. Stir until just mixed.
  • Pour batter into prepared pan. Bake 45-55 minutes or until rich brown and the center is set.
  • Note: Black walnuts can be used to create a uniquely flavored banana bread.
