EASY DOUBLE CHEESY NACHO MACARONI

Easy Double Cheesy Nacho Macaroni image

Here's a quick family favorite the way my grandma always made it!! The secret is in the nacho cheese sauce. She always used the plain nacho cheese soup, so if you cant find the Fiesta style don't worry about it. She'd also use this real fat spaghetti type of noodle but i'm not sure what they're called. Sometimes I'll add a can of chili con carne topped with some pickled jalepenos for a super fast one bowl meal! So yummy!

CREAMY MACARONI AND CHEESE

Creamy Macaroni and Cheese image

There are two schools of thought about macaroni and cheese: Some like it crusty and extra-cheesy (here's our recipe), while others prefer it smooth and creamy. But most people are delighted by any homemade macaroni and cheese. It is light years ahead of the boxed versions. This creamy version has one powerful advantage for the cook: There's no need to preboil the pasta. It cooks in the oven, absorbing the liquid from the dairy products.

NACHO MACARONI AND CHEESE

Nacho Macaroni and Cheese image

Categories     Herb     Pasta     Side     Bake     Vegetarian     Kid-Friendly     Quick & Easy     Dinner     Cheddar     Potluck     Bon Appétit     Sugar Conscious     Small Plates

Yield Makes 6 to 8 servings

Number Of Ingredients 9

2 cups small elbow macaroni
1/2 cup bottled thick and chunky salsa verde (medium heat)
1 cup (packed) fresh cilantro leaves
3 cups (packed) coarsely grated sharp cheddar cheese (12 ounces), divided
4 teaspoons all purpose flour
1 cup whole milk
3/4 cup heavy whipping cream
1/4 teaspoon (scant) ground cloves
1 cup large corn chips

Steps:

  • Preheat oven to 425°F. Cook macaroni in large saucepan of boiling salted water until tender but still firm to bite, stirring occasionally, about 6 minutes. Drain.
  • Meanwhile, blend salsa and cilantro in processor. Toss 2 cups cheese and flour in medium bowl to coat.
  • Bring milk, cream, and cloves to simmer in large saucepan over medium-high heat. Add cheese mixture. Whisk until sauce is smooth, about 1 minute. Mix in macaroni; season with pepper.
  • Spread half of macaroni mixture in 11 x 7-inch baking dish. Drop half of salsa mixture over in dollops. Sprinkle with 1/2 cup cheese. Top with remaining macaroni mixture and salsa mixture. Sprinkle chips over. Top with 1/2 cup cheese. Bake until heated through, about 10 minutes.

Tips:

  • Choose the right macaroni. Use a short, elbow-shaped pasta like penne or shells. This will help the sauce to coat the pasta evenly.
  • Cook the macaroni al dente. This means that it should be cooked until it is just tender, but still has a slight bite to it. If you overcook the macaroni, it will become mushy and the dish will be less enjoyable.
  • Make a creamy cheese sauce. Use a combination of cheddar cheese, Monterey Jack cheese, and cream to make a smooth and flavorful cheese sauce. You can also add other ingredients to the sauce, such as diced tomatoes, green chilies, or cooked bacon.
  • Assemble the nacho macaroni and cheese. Layer the cooked macaroni, cheese sauce, and nacho toppings in a casserole dish. You can use any type of nacho toppings you like, such as tortilla chips, shredded cheese, diced tomatoes, green onions, or sour cream.
  • Bake the nacho macaroni and cheese. Bake the dish in a preheated oven until the cheese is melted and bubbly. This will take about 30 minutes.

Conclusion:

Nacho macaroni and cheese is a delicious and easy-to-make dish that is perfect for any occasion. It is a great way to use up leftover macaroni and cheese, and it is also a fun and festive dish to serve at parties. With its creamy cheese sauce, crunchy tortilla chips, and flavorful nacho toppings, nacho macaroni and cheese is sure to be a hit with everyone who tries it.
