630 g frozen hash brown potatoes
1/3 cup cherry tomatoes, (halved)
1/2 tsp dried parsley

5 tablespoons olive oil

6 ounces freshly grated Monterey Jack cheese (about 2 cups)
4 large eggs
1 small avocado, diced
