1 cup long-grain rice
2 cups water
2 large chicken breasts, diced
1 tablespoon oil (or cooking spray for a healthier option)
1 (1 1/4 ounce) packet fajita seasoning mix
1/2 cup water
1 small onion, diced
1 green bell pepper, diced
3/4 cup corn
2 garlic cloves, crushed
2 cups mild salsa
1 1/2 cups grated cheese
2 ounces nacho chips (should produce 1/2 cup crumbs)

Steps:

  • Preheat the oven to 350°F or 180°C.
  • Start boiling the rice in 2 cups of water, covered. This should take 15-20 minutes.
  • Meanwhile, heat the oil in a skillet. Add the diced chicken and cook, stirring, for 3 minutes.
  • Stir in the 1/2 cup water and fajita seasoning.
  • Add the diced onion, green bell pepper, corn and garlic.
  • Cook for 10 minutes, stirring frequently, until the chicken and vegetables are cooked and the liquid has mostly reduced.
  • Add the salsa to the chicken mixture in the pan and stir.
  • When the rice is cooked and has absorbed all the liquid, add the rice to the chicken salsa mixture and stir. Pour into a 10x6 or equivalent baking tray.
  • Top with 1 cup of the cheese.
  • Crush the nachos into crumbs and scatter evenly over the cheese.
  • Top with the remaining cheese.
  • Bake in the oven for 15-20 minutes, until bubbling.

2 large ripe avocados, peeled and pitted
2 cups purchased thick salsa, mild
1 head red leaf lettuce or 1 head any kind lettuce, torn into bite-size pieces

3 cups coarsley broken tortilla chips

4 -5 green onions, chopped

3 lb boneless skinless chicken breast - thinly sliced, about 1/4 inch thick
1 1/4 oz package, taco seasoning mix
3/4 c water - more to thin if becomes too thick, before chicken is tender
1/4 - 1/2 c frozen corn, thawed - fresh charred on grill would be wonderful when corn is in season
1 - 15 oz white queso blanco cheese sauce - carefully heated
3 - 4 green onions, sliced - tops too
1 - 2 medium jalapeno's - seeded and sliced thin
8 oz refried beans - heated
1 medium tomato - seeded and diced
8 oz sturdy, corn tortilla chips
1/2 - 3/4 c guacamole - fresh is best - including link to my recipe

Steps:

  • 1. In a large skillet over medium heat - add a small amount of oil and once hot add chicken, separating as it cooks. Once no pink remains - stir in the taco seasoning and water. Simmer for 12 - 15 minutes. If becomes too thick, add a little more water. Once chicken is good and tender, remove from heat and set aside.

  • 4. Once you have second layer. Sprinkle with tomatoes. Top with desired sour cream and guacamole. Serve immediately, so chips stay crunchy.
  • 5. Family thought they were awesome. Other toppings that could be used would be black olives, cilantro, red onion, anything you like on your nacho's. Shredded cheese could be added to the top as well and placed under broiler to melt a few minutes.

2 jalapenos, de-stemmed
2 cloves garlic
1/2 onion, quartered
4 cups cheese, Mexican blend
1/4 cup cilantro
1 tsp cumin
Juice of 1 lime
1/4 cup butter (1/2 stick)
2 cups chicken broth
Salt & pepper to taste
1 (1-lb) bag blue corn tortilla chips
3 cups cooked and shredded chicken, preferably roasted
1 can refried beans
1 jar salsa verde
1 tomato, chopped
2 chopped green onions, white and green part only
Salsa, olives, sour cream, guacamole for finish

Steps:

  • 1) Bring a pot of water to a boil, add tomatillos, onion, jalapeno and garlic and simmer, uncovered for 10 to 15 minutes, or until tomatillos are tender. Drain. In a blender or food processor, added vegetables with 1/4 cup water, cilantro, cumin & lime juice and process until smooth. Allow salsa verde to cool slightly. 2) In a medium saucepan, melt butter and flour to form a roux. Cook until bubbly and slightly darkened, about 2-3 minutes. Whisk in chicken stock and cook until slightly thickened, about 8 minutes. Lower heat and stir 2 cups of cheese into the cheese sauce. Remove from heat and stir in salsa verde. 3) On a microwave safe platter, spread a thin layer of refried beans. Top with chicken. Cover platter with microwave-safe plastic wrap and microwave on high until beans and chicken are warmed, 3-5 minutes. Remove plastic wrap and add queso sauce, and remaining 2 cups of cheese. Microwave uncovered until cheese is melted, about 5 minutes. 4) Garnish nacho platter with your favorite nacho toppings, including chopped green onions, chopped tomato, olives, sour cream and guacamole.
