Time 20m

Yield 8 serving(s)

Number Of Ingredients 8

1 cup all-purpose flour
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
6 tablespoons butter, Cold
4 ounces cheddar cheese, finely Grated
1/4 cup toasted sesame seeds
1/2 teaspoon soy sauce
4 1/2-7 1/2 teaspoons water, Ice-Cold

Steps:

  • Combine flour, salt and pepper in medium bowl; cut in butter until mixture resembles coarse crumbs.
  • Stir in cheese and sesame seed. Combine soy sauce and 3 teaspoons water; stir into dry ingredients.
  • Add more water, a little at a time, mixing lightly until dough begins to stick together.
  • Turn out dough and press together on lightly floured board or pastry cloth; roll out to 1/8 inch thickness. Cut dough into 2 X 1 inch rectangles with pastry wheel or knife.
  • Place on lightly greased baking sheets and bake at 400 degrees F. 8 to 10 minutes, or until lightly browned. Remove crackers to rack to cool.

Tips:

  • Prepare the baking sheet: Line a baking sheet with parchment paper to prevent the cookies from sticking.
  • Cream the butter and sugar: Creaming the butter and sugar together until light and fluffy incorporates air into the mixture, resulting in a chewy texture.
  • Gradually add the eggs: Add the eggs one at a time, beating well after each addition. This will help prevent the mixture from curdling.
  • Use a sifter: Sifting the dry ingredients (flour, baking powder, baking soda, and salt) helps to incorporate air and ensure even distribution.
  • Fold in the chocolate chips: Gently fold the chocolate chips into the cookie dough using a spatula. Overmixing can cause the chocolate chips to melt and lose their shape.
  • Chill the dough: Chilling the dough for at least 30 minutes helps the flavors to develop and makes the dough easier to handle.
  • Roll the dough: Roll the dough out to a thickness of about 1/4 inch. Use a sharp knife or cookie cutter to cut the dough into desired shapes.
  • Bake the cookies: Bake the cookies in a preheated oven at 375°F (190°C) for 10-12 minutes, or until the edges are golden brown.
  • Cool the cookies: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
