This is an authentic Indian Naan recipe. I have made this many times. It goes well with Indian curry which has a lot of gravy, such as the Butter Chicken.

⅔ cup warm water (110 degrees F/45 degrees C)
1 teaspoon active dry yeast
1 teaspoon white sugar
2 cups all-purpose flour
1 teaspoon salt
¼ cup ghee
2 tablespoons plain yogurt
2 teaspoons kalonji (onion seed)

Steps:

  • Whisk the warm water with the yeast and sugar until the yeast is dissolved. Cover and let stand in a warm place for 10 minutes.
  • Sift flour and salt three times into a large bowl add the yeast mixture, half of the ghee and all the yogurt. Mix into a soft dough then knead on a floured surface for about 5 minutes or until dough is smooth and elastic. Place the dough in a large greased bowl, cover and let stand in a warm place for 1 1/2 hours or until the dough is doubled in size .
  • Punch down dough then knead for 5 minutes. Divide dough into 6 pieces. Roll each piece out into 8 inch round naans.
  • Cover an oven tray with foil and grease the foil. Brush the naan with a little of the remaining ghee and sprinkle with some of the kalonji. Cook naan one at a time under the broiler for about 2 minutes on each side or until puffed and just browned.

I love soft and tasty naan so much because it is easy to bite into any fun fillings you want in it....this sandwich is inspired by the big ol Muffalettas in New Orleans...I like all the traditional meats with the cheeses and olive salad but my vegetarian friends get a special one with three different cheeses of your choice with the olive salad so we can all play like we are at Mardi Gras together !

2/3 cup(s) olive salad *
4 ounce(s) thiny sliced ham
4 ounce(s) thinly sliced salami or summer sausage
4 ounce(s) thinly sliced mortadella or can use roast beef
4 ounce(s) thinly sliced provolone
4 ounce(s) thinly sliced fontina, swiss or similar white cheese
TO MAKE OLIVE SALAD:
1/4 cup(s) sliced stuffed green olives
1/2 cup(s) sliced black olives
1/4 cup(s) marinated red pepper strips
2 tablespoon(s) sliced peproncini or yellow pepper rings
2 tablespoon(s) olive oil

Steps:

  • If you are making your own olive salad, place the olive salad ingredients in small food processor or chopper and pulse until finely chopped.
  • Heat naan in microwave about 10 seconds to soften.
  • Place a layer of olive salad on one side of one naan. Then on top of olives, layer ham, salami, mortadella or beef, provolone and fontina. Top with another layer of olive salad, then top with remaining naan, lining up with other naan.
  • Place on paninni grill or foreman grill and grill about 4-5 minutes until golden and cheese is melted. You may cut in half first if needed to fit grill. Cut into 4 servings.
