Time 50m

Number Of Ingredients 15

4 c all-purpose flour
2 tsp baking soda
2 tsp baking powder
1/2 tsp salt
1 1/2 c (3 sticks) real butter, softened
3 c sugar
4 eggs
2 tsp real vanilla
1 c sour cream (do not use low fat or non-fat)
4 c mashed very ripe bananas
3 stick real butter
12 oz (one large can) evaporated milk
1 1/2 c brown sugar, firmly packed
2 lb confectioners sugar
whole pecans

Steps:

  • 1. Heat oven to 350 degrees. Grease and flour four 9 inch cake pans. Combine flour, baking soda, baking powder and salt in a large mixing bowl and whisk together.
  • 2. In a separate large mixing bowl combine butter and sugar and beat well. Add eggs one at a time mixing well after each addition. Add vanilla. Beat until mixture is light and fluffy (about 2 minutes).
  • 3. Add half the flour and half the sour cream and with mixer on lowest speed beat just until flour and sour cream disappear into the batter. Add the rest of the flour and sour cream and mix in the same way as before. Stir in bananas with a large spatula.
  • 4. Divide the batter evenly between the four cake pans. Bake for 30 minutes or until cakes are golden brown and toothpick comes out clean when inserted in the middle. Cool in pans on wire rack for about 10 minutes. Turn out of pan onto wire rack and let cool completely before frosting.
  • 5. To make frosting In a medium saucepan combine butter, milk and brown sugar. Over medium low heat bring mixture to a boil stirring occasionally. Continue to gently boil, stirring constantly, until mixture turns a golden amber color. This will take a while, usually about 15 to 20 minutes. Be patient, you can do it. Remove from heat and pour into a large mixing bowl. Let cool completely. When cool add confectioners sugar a little at a time mixing thoroughly until you have incorporated all the confectioners sugar. Mixture should be of frosting consistency.
  • 6. Place one layer top side down on a plate and frost top and side. Cover with second layer top side up, frost top and sides. Continue with the other 2 layers in the same way, frosting top and sides between each layer. Place whole pecans around the perimeter on top of cake to make it look pretty and then pour yourself a big glass of milk and a large piece of cake and enjoy.

BANANA SNACKING CAKE WITH SALTED CARAMEL GLAZE

Banana Snacking Cake With Salted Caramel Glaze image

This buttery snacking cake is a bit like banana bread, but richer, and topped with a sticky caramel frosting that is dotted with crunchy flakes of sea salt. The frosting, made from brown sugar and heavy cream, is easier than a classic caramel, but just as compelling, with the sea salt contrasting perfectly with its sweetness. It's important to use ripe bananas here. Soft, spotty ones with dark yellow skins will be the sweetest and most complex. Firm, pale yellow bananas just don't have enough intensity to flavor the cake.

Time 1h

Yield 12 servings

Number Of Ingredients 16

1/2 cup/115 grams unsalted butter (1 stick), melted, plus more for pan
1 1/2 cups/185 grams all-purpose flour
1/4 cup/50 grams granulated sugar
3/4 teaspoon baking soda
1/2 teaspoon fine salt
1 cup/250 grams mashed banana (from 2 to 3 very ripe bananas)
1/4 cup/60 milliliters sour cream
2 tablespoons dark brown sugar
2 large eggs
1 teaspoon vanilla extract
4 tablespoons/65 grams unsalted butter (1/2 stick), cut into pieces
1/3 packed cup/70 grams dark brown sugar
1/4 cup/60 milliliters heavy cream
Large pinch of fine sea salt
1/4 cup/30 grams confectioners' sugar
Flaky sea salt, for serving

Steps:

  • Heat oven to 350 degrees. Grease a 9-by-9-inch pan, and then line with parchment paper, letting the two long ends hang over the edges by at least 2 inches.
  • In a large bowl, whisk together flour, granulated sugar, baking soda and salt. Whisk in bananas, melted butter, sour cream, brown sugar, eggs and vanilla.
  • Scrape into baking pan and smooth the top. Bake until the top springs back when lightly pressed in the center, and a toothpick inserted in the center comes out clean, about 25 minutes. Let cool completely.
  • When cake is cool, make the glaze: In a medium or large pot (not a small one because the mixture will bubble up), combine butter, brown sugar, heavy cream and salt. Bring to a full boil and continue to boil over medium heat for 1 minute. Remove from heat and let sit for 5 minutes.
  • Whisk in confectioners' sugar until smooth, then immediately pour over cooled cake. Spread evenly across cake and let set for at least 30 minutes. Sprinkle with flaky sea salt before serving.

2 1/2 c flour
2 1/2 tsp baking powder
1/2 tsp baking soda
1/2 c butter, softened
1 1/4 c sugar
2 eggs
1 1/2 tsp vanilla
1/2 c buttermilk (or 1/2 tsp lemon juice with 1/2 cup milk)
1 c very ripe bananas, mashed (approx 2 bananas)
CARAMEL FROSTING
1/2 c butter
1 c brown sugar
1/4 c whole milk
2 c powdered sugar, sifted
1 tsp vanilla
3/4 c chopped pecans for garnish, optional

Steps:

  • 1. Preheat oven to 350. Grease and flour two 9" round cake pans.
  • 2. In bowl, combine flour, baking powder, and baking soda. In mixer, beat butter until creamy. Add sugar; combine well. Add eggs one at a time, mixing after each. Blend in bananas and vanilla. Reduce mixer to low and add in flour mixture by 1/2 cupfulls alternating with buttermilk, ending with dry ingredient added last. Mix until just blended.
  • 3. Divide batter between the two prepared pans. Bake at 350 for about 25 - 30 minutes until toothpick inserted in middle comes out clean. Let cool in pan for about 10 minutes before inverting onto wire rack to cool completely.
  • 4. To make frosting: Place butter and brown sugar into medium sized heavy saucepan over medium heat. Stir and cook until the mixture somes to a boil, about 2 minutes. Add the milk, stir and bring the mixture back to a boil, then remove the pan from the heat. Add powdered sugar and vanilla. Beat with a wooden spoon until the frosting is smooth. Use frosting while still warm to frost the cake. If frosting cools and hardens, place the pan back over low heat and stir until the frosting softens up.

Tips:

  • To achieve a moist and fluffy texture, use ripe bananas. Overripe bananas add extra sweetness and flavor to the cake.
  • Creaming butter and sugar together until light and fluffy incorporates air into the mixture, resulting in a lighter cake.
  • Use a combination of all-purpose flour and cake flour to provide structure and tenderness to the cake.
  • Add baking soda and baking powder as leavening agents to help the cake rise.
  • Buttermilk adds moisture and a slight tang to the cake. If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to regular milk and letting it sit for 5 minutes.
  • To make a smooth caramel icing, use a candy thermometer to ensure the sugar reaches the correct temperature. This will prevent the icing from being too thick or too thin.
  • To achieve a glossy finish on the icing, brush the top of the cake with simple syrup or milk before pouring the icing over it.

Conclusion:

This incredibly moist and flavorful banana cake with luscious caramel icing is a surefire hit. With its tender crumb, sweet banana flavor, and rich caramel topping, it's perfect for any occasion. Whether you're serving it for breakfast, dessert, or a special celebration, this cake is sure to be a crowd-pleaser. So, grab your ingredients and preheat your oven, because it's time to indulge in this delectable treat!
