1 ½ pounds lean ground beef
1 onion, chopped
2 (10 ounce) cans diced tomatoes with green chile peppers
1 (15 ounce) can kidney beans, drained
1 (15 ounce) can white hominy, drained
1 (1.25 ounce) package taco seasoning mix
1 (1 ounce) package ranch dressing mix
¼ cup shredded Cheddar cheese
¼ cup sour cream
1 ½ cups water

Steps:

  • In a Dutch oven, brown ground beef or turkey with chopped onion, stirring frequently. Once beef is browned drain grease from pan.
  • Add canned tomatoes, kidney beans, hominy, taco seasoning and ranch salad dressing mix. Mix well and let simmer over low heat for two hours. (Add 1 to 2 cups of water if necessary to make soup the desired consistency)
  • Ladle into soup bowls and garnish with shredded Cheddar cheese and a dollop of sour cream, if desired.

1 lb ground chuck, cooked
1 1/2 envelopes of ranch seasoning. or if you buy it in bulk like me then about 5 tablespoons
1 envolope dry taco seasoning (i prefer mccormick)
3 can(s) (12 oz) each rotel tomatoes, undrained
1 can(s) pinto beans (undrained)
1 can(s) black beans (undrained)
1 can(s) hominey( you can use white or yellow) undrained
1 can(s) corn (undrained)
1 can(s) (14.5 oz) stewed tomatoes, undrained
1 onion, chopped
1 c water

Steps:

  • 1. Brown meat in skillet.
  • 2. While meat is cooking, chop the onion and open all the cans and pour the ingredients into slow cooker.
  • 3. Drain the meat and place in slow cooker. Mix well. Cover and cook on low 4 hours.

My family loves tacos any way we can get them. I came up with this version which is similar to a chili but taste like tacos. It is very easy and tasty.

1 lb bulk pork sausauge - can be either original, sweet or hot
1 lb lean ground beef
1 envelopoe if low sodium taco seasoning
4 c water
2 can(s) (16 oz. each) kidney beans, rinsed and drained
2 can(s) (15 oz. each) pinto beans, rinsed and drained
1 can(s) (15 oz. each) black beans, rinsed and drained
1 can(s) (15 oz. each) garbanzo beans or chickpeas, rinsed and drained
2 c frozen corn, thawed
2 can(s) (14.5 oz. each) stewed tomatoes
2 can(s) (14.5 oz. each ) mexican diced tomatoes, undrained
1 jar(s) (16 oz.) chunky style salsa
optional toppings: sour cream shredded cheese and sliced black olives

Steps:

  • 1. In a soup kettle, cook sausge and beef over medium heat until no longer pink; Drain. Add taco seasoning and mix well. Stir in the water, beans, corn, tomatoes, and salsa. Bring to a boil. Reduce heat and simmer, uncovered for 30 minutes or until heated through stirring occasionally. Garnish with sour cream, cheese, and olives (optional).
  • 2. Note: When I created this I used my own stewed tomatoes and salsa. My salsa contains corn so I only put in one cup of corn. If you can then use your own as it will be that much better.
  • 3. Additional Note: You can also put this in your crockpot on low for 8 hours. Just cook the meat and then add everthing to your crockpot. Can get this ready the night before and just plug in before heading out to work or starting your busy day. It freezes well also.
