After tinkering with a few different recipes, this is my family's favorite version! Sooooo good, I could eat the whole bowl! You can easily add cooked chicken and make it a main dish! The honey is an optional ingredient; leave it out if you don't like the noodles sweet.

8 ounces spaghetti, cooked al dente, drained
1/4 cup peanut butter
1/4 cup soy sauce
2 tablespoons seasoned rice wine vinegar
1 tablespoon sesame oil
2 teaspoons sambal oelek (chili paste)
1/4 cup honey (optional)
4 green onions, sliced
2 tablespoons sesame seeds (toasted if you like)

Steps:

  • Heat peanut butter in microwave for 20 seconds to soften.
  • In a large bowl whisk together softened peanut butter, soy sauce, vinegar, sesame oil, sambal oelek and honey (if using).
  • Add spaghetti, green onions and sesame seeds.
  • Toss well.
  • Chill until ready to serve - or serve at room temperature.

1/2 cup chicken broth

8 oz linguine noodles
sesame seeds for garnish
green onions for garnish

Steps:

  • Cook the noodles in a large pot according to package directions.
  • While the noodles are cooking, in a medium sauce pan whisk together peanut butter, soy sauce, sesame oil, 1/2 cup chicken broth, minced garlic, ginger, and sriracha chili sauce. Cook over medium heat until smooth. Remove from the heat and set aside.

½ (8 ounce) package spaghetti
2 tablespoons peanut butter
1 tablespoon honey
2 tablespoons tamari
1 teaspoon Thai chili sauce
1 teaspoon sesame oil
1 teaspoon ground ginger
1 clove garlic, minced
1 green onion, chopped
2 teaspoons sesame seeds

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the spaghetti, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 12 minutes. Drain well in a colander set in the sink.
  • Melt the peanut butter in a large microwave-safe glass or ceramic bowl, 15 to 20 seconds (depending on your microwave). 2 cups asparagus pieces or broccoli florets
1 red bell pepper thinly sliced
2 tbsps water
4 oz firm tofu drained and cut into 1/2-inch cubes
2 to 3 tablespoons soy sauce
2 to 3 tablespoons Spicy Thai Chili Sauce
1 tbsp sesame oil
1 package (7 oz) Stir Fry Rice Noodles
3 tbsps toasted sesame seeds

Steps:

  • HEAT oil in large skillet or wok on medium-high heat. Add garlic; stir fry 30 seconds or until fragrant. Add asparagus and bell pepper; stir fry 2 minutes. Add water; cover and cook 5 minutes or until vegetables are tender-crisp. Add tofu, soy sauce, chili sauce and sesame oil; stir fry until heated through.
  • MEANWHILE, bring large pot of water to boil. Add rice noodles; cook 3 to 5 minutes or until noodles are tender but firm. Drain well. Immediately place warm noodles in large bowl. Add vegetable mixture and sesame seeds; toss well.
