This Corned Beef Casserole is the perfect dish for Saint Patrick's Day! It contains the classic Irish ingredients of corned beef, cabbage, and potatoes, along with a creamy sauce.

3-4 small potatoes, peeled and thinly sliced.
1/2 cup chopped onion
2 cups shredded cabbage
1 (12 ounce) can corned beef
1 (10 1/2 ounce can) Cream of Celery Soup
1 cup milk
1 teaspoon mustard
salt and pepper to taste

Steps:

  • Lightly grease a 9x13 baking dish and preheat your oven to 375 degrees F.
  • Place one layer of potato slices on the bottom of the dish.
  • Sprinkle with salt and pepper if desired.
  • Sprinkle the the chopped onions on top, followed by the shredded cabbage and corned beef.
  • Top with the rest of the sliced potatoes and add salt and pepper if desired.
  • In a small mixing bowl, stir together the Cream of Celery soup, the milk, and the mustard. Pour over the top of the casserole.
  • Cover with foil and bake for 1 1/2 hours. If desired, remove the foil after this time and turn your oven on to "broil" for 2-3 minutes until brown spots begin to form. Watch carefully and remove before burning.

1 can (12 ounces) corned beef, crumbled or 1-1/2 cups diced cooked corned beef
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
8 ounces cheddar cheese, cubed
1 package (7 ounces) small shell pasta, cooked and drained
1 cup milk
1/2 cup chopped onion
2 bread slices, cubed
2 tablespoons butter, melted

1 8oz package Macaroni
1 can Cream of Chicken Soup
1 can Corned Beef, cut up
1 cup Milk
¼ lb. Cheddar Cheese, grated
1 small Onion, diced
2 Tablespoons Butter, melted
½ cup Panko Bread Crumbs

Steps:

  • Cook pasta about 3 minutes less than called for according to box directions.
  • Drain the pasta. Set aside.
  • Dice the onion.
  • Grate the cheddar cheese.
  • Place onion and cheese in a large mixing bowl.
  • Add the can of cream of chicken soup.
  • Add the milk.
  • Stir until fully combined.
  • Add the cut up corned beef.
  • Fold the beef into the other ingredients.
  • Butter a 13x9x2 casserole dish.
  • Pour the beef and pasta mixture into the buttered dish.
  • Place two tablespoons of butter in a small bowl. Melt butter in microwave.
  • Stir the half cup of bread crumbs into the melted butter until fully coated.
  • Spread the buttered bread crumbs over the top of the dish.
  • Bake at 350F degrees for 30 minutes or until bubbly hot and lightly browned on top.
  • Remove from oven when done. Set on folded towel and let cool for 10-15 minutes before serving.

6 cups frozen potato tots, from a 32-ounce bag (about 28 ounces)
1 small yellow onion, finely chopped
1 red bell pepper, finely chopped
1 green bell pepper, finely chopped
Kosher salt and freshly ground black pepper
1/2 pound sliced deli corned beef, cut into 1/2-inch pieces
8 large eggs
1 1/2 cups whole milk
3/4 teaspoon dry mustard
4 dashes hot sauce, or to taste
1 1/2 cups shredded Cheddar

Steps:

  • Preheat the oven to 450 degrees F. Grease a 9-by-13-inch baking dish with oil. Fill the bottom of the dish with one layer of the potatoes (about 4 cups). Drizzle the potatoes with 1 tablespoon of the oil. Bake until hot and crisp, about 20 minutes. Let cool for 15 minutes.

1 pound cooked corned beef, cut into bite-size pieces
½ cup chili sauce
½ cup mayonnaise
1 (14 ounce) can sauerkraut, drained
1 ½ cups shredded Swiss cheese, divided
1 (12 ounce) can refrigerated biscuit dough

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a 2-quart casserole dish.
  • Heat butter in a skillet over medium heat until bubbly.

This is a 1950's thrifty comfort food for the family recipe from my mother. It started out with everything from scratch instead of the Kraft dinner. However, when my Mother discovered Kraft Macaroni & Cheese this quickly became her "go to" and she changed the recipe and we had it often, especially when she had a busy day.

2 box kraft macaroni and cheese
1 small onion, diced
1 tsp worchester sauce
1 c milk
14 3/4 oz can whole kernel corn (drained)
1 small jar pimento
2 tsp dried parsley (optional)
salt & pepper to taste

Steps:

  • 1. Cook macaroni and cheese as directed on the box. (Use all the ingredients listed on the box, such as milk and butter with the cheese packet included in the box.)
