1 cup pearl onions
4 cups water
6 tablespoons butter
6 tablespoons all-purpose flour
3 cups milk
1 pinch salt to taste
1 pinch ground black pepper to taste

Steps:

  • Peel onions, and drop into boiling water. Cook until tender. Drain, reserving liquid. Set onions aside while you make the sauce.
  • Melt butter or margarine in a saucepan over medium heat. Whisk in flour to make a paste. Mix together cooking water and milk. Add milk mixture slowly to the saucepan, stirring constantly, and cook until thickened. Add salt and pepper to taste. Add onions, and transfer to a serving dish.

2--10oz bunch pearl onions
2-10oz c peas,fresh unshelled or canned
3 Tbsp butter
3 Tbsp all purpose flour
2 c milk, warmed
1/4 tsp salt
1/8 tsp pepper

Steps:

  • 1. In 10-inch skillet, heat 1-inch water to boiling over high heat. Add onions; if peas are fresh add peas; heat to boiling. Reduce heat; cover and simmer until tender.10-15 minutes.
  • 2. Meanwhile, prepare white sauce; In heavy 2 quart saucepan, melt butter over low heat. Add flour and cook, stiring, 1 minute. With wire whisk, gradually whisk in hot milk, cook over medium heat, stirring constantly with wooden spoon, until mixture has thickened and boils.Reduce heat and simmer, stirring frequently,3 minutes. Stir in salt and pepper;Remove from heat.Return onions and peas to skillet.Add sauce and cook, stirring, until heated through.

1/4 cup butter
1 1/2 tablespoons flour
1 1/2 cups half-and-half
