1 head cabbage, chopped into 1-inch squares or strips (See Recipe Note)
1 stick butter, halved, melted
1 onion, finely chopped (about 1 cup) (See Recipe Note)
1 10.5 oz can cream of mushroom soup
1/2 cup mayonnaise
1/4 tsp salt
1/2 tsp pepper
dash of cayenne, optional
1 cup shredded cheddar
1 sleeve ritz crackers, roughly crushed (not too fine, you want bits and pieces of crackers)

Steps:

  • Preheat oven to 350F.
  • Rinse head of cabbage under cool water first. Chop the cabbage into 1-inch squares or strips. Discard the hard core and end piece. READ RECIPE NOTES (A & B) BELOW.
  • Place cabbage and chopped onion into a large casserole dish (9 x 13). Pour half a stick of melted butter over the cabbage. Mix well.
  • Mix the soup, mayonnaise, salt, pepper, and cayenne in a bowl. A whisk works well for this.
  • Pour into the casserole dish and mix well with the cabbage.
  • Mix the crushed crackers and cheese and pour on top of the soup mixture.
  • Drizzle the remaining 1/2 stick melted butter on top of the cracker and cheese mixture. Bake at 350F for 30-40 minutes or until the cracker topping is crispy browned.

1 medium (2 lb.) cabbage, shredded (about 10 cups)
1 cup chopped celery (about 2 stalks)
2 medium-size yellow onions, chopped (about 2 1/2 cups)
1 garlic clove, chopped (about 1 tsp.) or to taste
Cooking spray
2 tablespoons all-purpose flour
1 1/2 cups evaporated milk (from 1 12-oz. can)
Dash of Worcestershire sauce
1 teaspoon kosher salt, or to taste
1/2 teaspoon black pepper, or to taste
4 ounces Parmesan cheese, grated (about 1 cup), divided
1/3 cup dry breadcrumbs

Steps:

  • Preheat oven to 350˚F. Melt 2 tablespoons of the butter in a large skillet set over medium. Add cabbage, celery, onions, and garlic, and cook, stirring often, until tender, 10 to 15 minutes. Transfer to a 3-quart lightly greased (with cooking spray) baking dish.
  • Melt 2 tablespoons of the butter in a medium saucepan over medium; whisk in flour, and cook, whisking constantly, until smooth and thick, about 1 minute. Gradually add milk to saucepan, whisking constantly to remove any clumps. Cook, whisking constantly, until thickened and smooth, about 3 minutes. Remove from heat, and whisk in Worcestershire, salt, pepper, and 1/2 cup of the Parmesan until smooth. Pour sauce over cabbage mixture.
  • Place remaining 1 tablespoon butter in microwavable bowl, and microwave on HIGH until melted, about 30 seconds. Add breadcrumbs and remaining 1/2 cup Parmesan to melted butter, and stir until combined. Sprinkle breadcrumb mixture evenly over cabbage.
  • Bake in preheated oven until casserole is bubbly and breadcrumbs are golden, 20 to 25 minutes.

1 small cabbage head wedged
1 c hot water
1 1/2 lb ground beef
1 c diced onions
1/2 c uncooked rice
2 can(s) diced tomatoes (15 oz)
1/3 tsp black pepper

Steps:

  • 1. Brown meat in skillet with onions.
  • 2. Butter a 10x13 casserole dish then line with cabbage.
  • 3. Mix Beef/Onion mixture with uncooked Rice.
