Mom's Applesauce Cake is an old-fashioned, treasured family recipe, that I found in my mom's recipe box.

Steps:
- In a large bowl beat the egg. Add the sugars, oil, vanilla, and applesauce. Mix well.
- In a separate bowl mix together all the dry ingredients. Add the dry ingredients to the liquids and mix until combined.
- Pour the batter into a 13" x 9" baking dish that has been sprayed with non-stick spray.
- Bake in a 350 degree oven for 23-28 minutes, or until a toothpick comes out clean when inserted into the center of the cake. Let the cake cool.
- Frost if desired.

- Place raisins and hot water in a small bowl; set aside. , In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg. Combine the flour, baking soda, salt and spices; add to creamed mixture alternately with applesauce and water. - Peel and slice apples.
- Toss with lemon juice so they don't turn brown.
- Beat eggs and sugar; add oil and beat till smooth.

- Preheat oven to 300 degrees F (150 degrees C). Grease and flour a tube pan.
- Whisk together flour, salt, cinnamon, cloves, and soda. Set aside.
- Cream together 1/2 cup butter and 2 cups brown sugar, beating until light and fluffy. Mix in eggs. Add flour mixture into creamed mixture alternately with applesauce, beginning and ending with flour mixture. Stir in the raisins, dates, and walnuts. Pour batter into prepared pan.
- Bake in preheated oven until a tester inserted in the center of the cake comes out clean, about 1 1/2 hours. Cool on wire rack.
- To make icing, melt 1/2 cup butter or margarine in a small saucepan over low heat; stir in 1 cup brown sugar. Boil for 2 minutes. Stir in milk, and continue to stir until the mixture returns to a boil. Remove from heat, and cool for 5 minutes. Beat in vanilla and confectioners' sugar. Frost cooled cake.

Today she gave me this recipe for another soft apple cake (to distinguish them from her passover apple cake and her "hard" apple cake, my personal favorite). It whips up fast, makes a nice presentation, and freezes well if you dont gobble it down first. MOM'S APPLESAUCE CAKE
My Mom got this recipe from a little German lady at Lake Quinault, WA, right after WWII. It was a constant in our house, when I was growing up, as it was my Dad's favorite! Mom served it unfrosted, as it was so nice and moist! Do not overbake, to prevent it becoming too dry.

Steps:
- Cream together butter and sugar.
- Add eggs and mix well,
- Sift together flour, cinnamon, cloves and baking soda, and add in to butter/sugar mixture. (It will be thick, like cookie dough.)
- Mix in raisins and nuts, and hot applesauce (I heat in small saucepan on stove, but microwave should work, also). Hot applesauce will thin down the dough into a batter.
- Pour into a 9" x13" baking pan (sprayed with Baker's Joy, or greased and floured)
- Bake at 350* for 45 to 50 minutes, until toothpick comes out clean. Start checking at 40 minutes. Cake is best if slightly underdone.
- Serve plain, dusted with powdered sugar, or frost with cream cheese icing. I grew up eating it plain.
Tips:
- For a moist and flavorful cake, make sure to use ripe, juicy apples. Granny Smith and Honeycrisp apples are good choices.
- To easily peel and core the apples, use a vegetable peeler and an apple corer.
- If you don't have a food processor, you can grate the apples by hand using a box grater.
- Be sure to grease and flour the cake pan before adding the batter, to prevent sticking.
- Bake the cake until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely before frosting it.
