Time 1h

Yield 4 to 6 servings

Number Of Ingredients 14

1 tablespoon unsalted butter, at room temperature
8 saltines
Kosher salt and freshly ground black pepper
1 cup canned fried onions (about 2 ounces)
Kosher salt and freshly ground black pepper
12 ounces fresh green beans, ends trimmed, cut into about 1 1/2-inch pieces
2 tablespoons unsalted butter
8 ounces white button or cremini mushrooms, stems trimmed, sliced 1/4 inch thick
1 small onion, finely chopped
1 medium clove garlic, minced
1/4 teaspoon dried thyme
2 teaspoons all-purpose flour
1/3 cup low-sodium chicken broth
1 cup half-and-half

Steps:

  • For the topping: Add the butter to a large bowl. Crumble the saltines with your hands, adding them to the bowl as you do so, and work them into the butter. Season with salt and pepper. Add the fried onions and mix together.
  • For the beans: Preheat the oven to 375 degrees F.
  • Bring 2 quarts water to a boil in a large pot. Add 1 tablespoon salt and the beans. Cook until bright green and only slightly crunchy, about 3 minutes. Drain the beans into a colander and rinse with cold water to cool quickly. Set aside to drain further in the colander.
  • Add the butter to a large skillet over medium-high heat and heat until the butter is melted and the foaming subsides, about 1 minute. Add the mushrooms, onion and garlic and cook until the mushrooms start to release their liquid, about 3 minutes. Add the thyme, 3/4 teaspoon salt and 1/4 teaspoon pepper and cook until the mushrooms are tender and there is only a little liquid left in the skillet, about 5 minutes. Add the flour and cook, stirring, until completely blended and absorbed, about 30 seconds. Stir in the broth and reduce the heat to medium. Stir in the half-and-half, bring to a gentle simmer and cook, adjusting the heat if necessary to maintain a gentle simmer, until the sauce is the consistency of thickened cream, 6 to 8 minutes.
  • Arrange the beans in a 9-inch pie plate. Pour the mushroom mixture over the beans and mix to coat as well as you can. Sprinkle with the topping and bake until the topping is golden brown and the sauce is bubbly around the perimeter, about 15 minutes.

Individual Green Bean Casseroles image

Give classic green bean casserole a new spin by booting the canned mushroom soup. Expect fresh green beans cooked to tender-crisp perfection in a delicious, homemade sauce, topped with crunchy onions and served as mini casseroles.

Provided by lutzflcat

Time 45m

Yield 4

Number Of Ingredients 15

1 pound fresh green beans, trimmed and cut into 1 1/2-inch pieces
cooking spray
2 tablespoons unsalted butter
1 cup sliced fresh mushrooms
1 medium shallot, thinly sliced
1 clove garlic, minced
1 tablespoon all-purpose flour
½ cup chicken stock
1 teaspoon low-sodium soy sauce
1 teaspoon Dijon mustard
½ teaspoon dried thyme
½ cup half-and-half
salt and ground black pepper to taste
1 strip crispy cooked bacon, crumbled
½ cup French-fried onions (such as French's®)

Steps:

  • Bring a large pot of lightly-salted water to a rolling boil. Add beans and cook until just tender, about 5 minutes. (The beans will not soften too much more during baking, so if you want them softer, cook to your preference.)
  • Drain beans, run under cold water, and place in a bowl of ice water to stop the cooking. When beans are chilled, drain and set aside.
  • Meanwhile, preheat the oven to 350 degrees F (175 degrees C). Spray the inside of 4 ramekins with cooking spray.
  • Melt butter in a medium skillet over medium heat. Add mushrooms and shallot and cook until they start to brown, 2 to 4 minutes. Add garlic and cook until fragrant, about 30 seconds.
  • Sprinkle flour over the mushrooms, stirring well to combine. Gradually pour in chicken stock, soy sauce, Dijon, and thyme, stirring constantly; the mixture will be thick at this point. Stir in half-and-half, salt, and pepper until well combined. Reduce heat to low and simmer until flavors have melded and sauce has thickened, 3 to 5 minutes.
  • Stir in green beans and bacon until well combined. Spoon into the prepared ramekins and top with French-fried onions.
  • Bake in the preheated oven for 13 to 15 minutes. Serve immediately.

MY MINI GREEN BEAN CASSEROLE

My Mini Green Bean Casserole image

I LOVE green bean casserole...I HATE leftovers. This recipe can serve as a side dish for two or as a whole meal for one. If you want you can leave out the mushrooms and substitute for cream of celery. However, I really like mushrooms. Some people may also like to sprikle some french's dried onions on top, but once again, it is not my thing.

Tips:

  • Use fresh green beans: Fresh green beans have a crisper texture and a more vibrant flavor than canned or frozen beans. If you can't find fresh green beans, you can use frozen or canned beans, but be sure to drain and rinse them well before using.
  • Don't overcook the green beans: Green beans should be cooked until they are tender but still have a slight crunch. Overcooked green beans will be mushy and bland.
  • Use a good quality cream of mushroom soup: The cream of mushroom soup is the base of the casserole, so it's important to use a good quality soup. Look for a soup that is made with real mushrooms and has a creamy, rich flavor.
  • Add some extra flavor: You can add some extra flavor to the casserole by adding some chopped onion, celery, or garlic. You can also add some grated Parmesan cheese or crumbled bacon.
  • Bake the casserole until it is bubbly and golden brown: The casserole is done baking when it is bubbly and golden brown. The top of the casserole should be slightly firm and the center should be set.

Conclusion:

Mini green bean casserole is a delicious and easy-to-make side dish that is perfect for any occasion. It is a classic dish that is always a hit with family and friends. With its creamy, flavorful sauce and crispy green beans, this casserole is sure to be a hit at your next gathering.
