Steps:
- Preheat the oven to 325 degrees F.
- Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
- In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.
MY MARVELOUS MEATLOAF
I make a really good meatloaf!!! And I credit my meatloaf to food network stars such as Tyler, Rachel and Guy for starters...I used to watch them cook all the time...and one thing alot of them do is saute or caramelize their onions before adding to the meat...it adds flavor and moisture...mmm I hope you like this recipe and I...

Steps:
- 1. In a small bowl, pour milk over bread and set aside.
- 2. Drizzle olive oil in a skillet, heat to to a med high and add mushrooms and onions, season with salt and pepper, saute until caramelized 5-8 minutes, stir in garlic. Set aside to cool. I pour out onto a dinner plate and spread around so it cools faster.
- 3. Squeeze milk from bread and crumble into a large bowl, disgard milk. Add meats, mushroom mixture, worcetershire sauce, eggs, cheese, 1 1/2t salt and 1/2t pepper and mix well. Divide mixture among 2 large loaf pans. Bake at 375 for 45 min.
- 4. Mix together brown sugar and ketchup divide and spread over top each loaf, I like to drain fat off loafs before adding ketchup topping. But not needed. Then put back in oven another 15-20 min. Remove from oven...let rest 10 min. then remove from pan onto a platter, I use 2 flipper type spatulas, one on each end to lift out of the pans.
- 5. I've also done many little things to this meatloaf: ~add cooked wild rice and crasins ~add crumbled blue cheese ~topped with cocktail sauce instead of the ketchup mixture...(cocktail sauce is mainly ketchup and horseradish) ~added thyme and shredded swiss ~added smoked paprika ~added spinach and artichoke ~I have even shaped the meat mixture into 8 lil loaves, place in a 9x13 pan, and poured a large jar of sauerkraut over top then baked it...toward the end sprinkle with shredded swiss and bake until golden... ~added a small can of italian tomato paste to mixture

YES, VIRGINIA THERE IS A GREAT MEATLOAF
Absolutely delicious meatloaf and sauce! Those who claim they don't believe there can be such a thing as a great meatloaf will love this. Based on a meatloaf given to me by a dear friend, Virginia Strehl, Memphis, and Leesburg, Fla. Nita Holleman, 2000

Steps:
- Meatloaf: Combine meat loaf ingredients and place into a loaf baking dish.
- Smooth out top.
- Sauce: Combine sauce ingredients and pour on top and sides of meatloaf.
- Bake at 350°F about 1 hour to 1 hour 15 minutes or until done.
- ENJOY!
- *The addition of 1 or 2 teaspoons of Kitchen Bouquet® makes this recipe very good.
- **Recipe should be"plump" from the addition of the milk or Half & Half.
- It should NOT be runny.
- ***A second batch of sauce served hot is good to serve with the meatloaf.
- Nita's Note: I note that some of you are using game meat such as deer -- Deer is a very DRY meat. It is wise to HAVE some fat added to the deer -- especially to ground deer. Maybe 25 % fat, ( I recommend 1 lb of ground venison, and 1/2 lb of deer sausage for fat content), otherwise your results will be poor. I don't know about some of the other game meat some are using. Please consult an expert. The recipe is delicious as it stands! Enjoy! Nita Holleman.
CLASSIC MEATLOAF
The secrets to this meatloaf are fresh, very finely diced vegetables that give it moisture and flavor--and a light touch in mixing together the ingredients. This hearty meatloaf is the perfect meal for cool fall and winter evenings, served with mashed potatoes and simple mushroom gravy.

Steps:
- Preheat the oven to 325 degrees F.
- Place the carrot, celery, onion, red bell pepper, mushrooms, and garlic in a food processor, and pulse until very finely chopped, almost to a puree. Place the minced vegetables into a large mixing bowl, and mix in ground chuck, Worcestershire sauce, and egg. Add Italian herbs, salt, black pepper, and cayenne pepper. Mix gently with a wooden spoon to incorporate vegetables and egg into the meat. Pour in bread crumbs. With your hand, gently mix in the crumbs with your fingertips just until combined, about 1 minute.
- Form the meatloaf into a ball. Pour olive oil into a baking dish and place the ball of meat into the dish. Shape the ball into a loaf, about 4 inches high by 6 inches across.
- Bake in the preheated oven just until the meatloaf is hot, about 15 minutes.
- Meanwhile, in a small bowl, mix together brown sugar, ketchup, Dijon mustard, and hot sauce. Stir until the brown sugar has dissolved.
- Remove the meatloaf from the oven. With the back of a spoon, smooth the glaze onto the top of the meatloaf, then pull a little bit of glaze down the sides of the meatloaf with the back of the spoon.
- Return meatloaf to oven, and bake until the loaf is no longer pink inside and the glaze has baked onto the loaf, 30 to 40 more minutes. An instant-read thermometer inserted into the thickest part of the loaf should read at least 160 degrees F (70 degrees C). Cooking time will depend on shape and thickness of the meatloaf.

- Add moisture to the meatloaf: This will help keep it from drying out. Common ways to add moisture include adding eggs, milk, bread crumbs, or vegetables.
- Season the meatloaf well: This is essential for adding flavor. Common seasonings include salt, pepper, garlic powder, onion powder, and paprika.
- Form the meatloaf into a loaf shape: This will help it cook evenly. You can use a loaf pan or a free-form method.
- Bake the meatloaf at a moderate temperature: This will help prevent it from drying out. The ideal temperature is 350 degrees Fahrenheit.
