ITALIAN GREEN BEANS

When I was first married, I wasn't a great cook. Twenty years later, I have many dishes I'm proud of, including this family favorite. Basil, oregano and Romano cheese give these beans their Italian accent. I serve them with broiled steak, pork roast, lamb chops or pork chops. -Andrea Ibzag, Gordon, Wisconsin

Tips:

  • Choose fresh, tender green beans: Look for beans that are bright green and snap easily when bent. Avoid beans that are yellowed, limp, or have brown spots.
  • Trim the beans properly: Cut off the stem ends of the beans, and then remove any strings that run along the sides. This will help the beans cook evenly and make them more tender.
  • Blanch the beans before cooking: Blanching is a quick process of boiling the beans in water for a few minutes. This helps to preserve their color and nutrients, and it also makes them more tender.
  • Use a variety of cooking methods: Green beans can be boiled, steamed, sautéed, grilled, or roasted. Each method produces a slightly different flavor and texture, so experiment to find your favorite way to cook them.
  • Add flavorings: Green beans are a versatile vegetable that can be paired with a variety of flavors. Try adding garlic, onion, herbs, spices, or a squeeze of lemon juice to enhance their taste.
