This is my family's favorite COFFEE CAKE recipe! Buttery, brown sugary, perfectly spiced tender cake that we serve every Christmas morning.

3 cups all-purpose flour
1¼ cups granulated sugar
1¼ cups brown sugar
1½ teaspoons baking soda
1½ teaspoons baking powder
1½ teaspoons nutmeg
2 teaspoons ground cinnamon
1/2 teaspoon salt
1 cup vegetable or canola oil
1 egg (lightly beaten)
1¼ cups buttermilk
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F. Liberally grease a 9x13" rectangular baking dish with cooking spray; set aside.
  • In a large bowl, combine the flour, sugars, baking soda, baking powder, nutmeg, cinnamon, and salt and whisk together until incorporated. Pour in the oil and stir to combine until moist crumbs come together. Reserve 2 cups of the crumbs.
  • Add in the beaten egg, buttermilk, and vanilla to the original bowl and stir until a thin batter comes together. Do NOT overmix the batter; some lumps are okay. Pour the batter into the prepared pan in an even layer. Sprinkle the top of the batter evenly with the crumbs.
  • Bake for 30-35 minutes or until a toothpick inserted near the center comes out clean or with moist crumbs. Cool about 15-20 minutes before cutting into squares to serve, or cool longer if you want prettier squares as this is a very tender cake!

This is my grandmas receipe, made totally from scratch. Best right out of the oven but still great warmed up in the microwave. Its very quick and easy to make and it makes your house smell amazing!

1 stick butter, softened
1 1/2 c sugar
2 c flour (self rising)
1 c milk
dark brown sugar
cinnamon

Steps:

  • 1. Mix together milk, sugar, flour and butter to make cake like batter. Add more flour if needed.
  • 2. Pour mixture into greased 13 x 9 pan.
  • 3. Sprinkle with dark brown sugar and cinnamon to taste.
  • 4. Bake in 375 degree oven 15-20 min.

1 1/2 c flour
1/2 cup c cold margarine
1 c light brown sugar
1/2 tsp salt
1 large egg
1/2 c sour cream
1 tsp nutmeg
1 tsp cinnamon
1 tsp baking soda

  • 1. Sift before measuring. Work flour and sugar by using 2 knives to cut margarine. Save 1 cup of this mixture of sugar, margarine and flour for the top after baking.
