2 1/4 pounds ground ham ((precooked ham))
3/4 pound ground pork
2 large eggs
2 tablespoons yellow mustard
1/2 cup ketchup
1 medium onion ((chopped))
1 1/2 cups graham crackers ((crushed))
3/4 cup milk
1/2 tablespoon paprika
1 1/2 cups brown sugar
1/2 cup white vinegar
1 teaspoon yellow mustard
8 ounces crushed pineapple ((with juice))

Steps:

  • Preheat the oven to 350 degrees Fahrenheit.
  • In a large bowl, mix together the ground ham, pork, eggs, mustard, ketchup, onion, graham crackers and milk. Mix well.
  • Spray a 9x13 baking pan with cooking spray.
  • Shape the ham mixture into a loaf, packing the meat firmly.
  • Sprinkle the top of the ham loaf with paprika.
  • Bake the ham loaf for 20 minutes. During this 20 minutes, make the pineapple glaze.
  • Combine the glaze ingredients together in a small saucepan over medium heat. Cook and stir until the sauce comes to a boil, then boil for 1 minute.
  • Remove from the heat and set aside until the ham loaf is ready to glaze.
  • After the initial 20 minutes of baking, brush the top of the loaf with the pineapple glaze.
  • Bake again for 70 minutes, basting the ham loaf 2 or 3 more times during baking.

It's great for company because you can mix the loaf in advance, then simply pour on the sauce before putting it in the oven...it's the sauce that makes it so good!

1 cup finely crushed saltines
1/4 teaspoon pepper
1-1/2 pounds ground fully cooked ham

1/3 cup vinegar
1/4 cup water
1 can (8 ounces) crushed pineapple, undrained

2 1/2 pounds boneless cooked ham, sliced into 18 slices
Two 20-ounce cans pineapple slices
18 maraschino cherries
3/4 cup packed brown sugar
2 tablespoons apple juice
2 teaspoons Dijon mustard

Steps:

  • Preheat the oven to 400 degrees F.
  • Shingle the ham slices in 2 rows on a ceramic baking dish. Top each with a pineapple slice, then place a cherry in the middle of each pineapple ring. Cover with foil and bake for 15 minutes.
  • Whisk together the brown sugar, apple juice and mustard. Remove the ham from the oven, uncover and drizzle with the glaze. Continue to bake, glazing in 5-minute intervals, for an additional 20 to 25 minutes. Serve in the baking dish.

1 lb ground fresh pork
1 c bread crumbs or cracker crumbs (fine)
2 eggs
3/4 to 1 c milk
1 medium onion diced finely
1 small red bell pepper diced finely (optional) i like the sweetness, and gives nice color
GLAZE
3/4 c brown sugar
1 tsp dry mustard ( i use a little extra, as we like it with a little bite
1/2 c water
1/2 c vinegar

THIS HAM LOAF CAN BE MADE WITHOUT THE PINEAPPLE. BUT MAKE SURE YOU GLAZE WITH SAUCE
1 lb ground ham
1 lb ground pork
3/4 tsp each - salt & pepper
1 1/2 Tbsp brown sugar
2 eggs
4 slice fresh wheat or white bread crumbs - or 2 cups worth
1/2 c milk
1 medium onion, minced
1/4 tsp paprika
1/4 - 1/2 CUP DRAINED CRUSHED PINEAPPLE FOR THE TOP
BASTING SAUCE
1/4 c vinegar
1/2 c brown sygar
1/4 c pineapple juice
1 Tbsp dry mustard

Steps:

  • 1. In a small saucepan, whisk together glaze ingredients and bring to a boil. Simmer for about 10 minutes, then cool. It will thicken some as it cools.
  • 2. Preheat oven to 350 degree F. Grease a baking dish or small roaster. In a large bowl, mix all ham loaf ingredients until thoroughly blended.
  • 3. Pour out meat mixture into prepared baking dish and shape into a loaf as you would a meatloaf. Brush the top of loaf with glaze. Place in oven and bake for 1 hour and 10 minutes, glazing several times during baking process.
  • 4. Remove from oven. sprinkle on the pineapple if using and drizzle with glaze. Place back into oven for another 10 - 15 minutes. I broiled the last 5 minutes.
  • 5. Place onto a serving platter and slice. Serve with remaining glaze.

1 (6 pound) fully-cooked, bone-in ham
1 fresh pineapple
2 (6 ounce) cans pineapple juice
1 cup brown sugar

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Place the ham, cut side down, into a roasting pan.
  • Cut the skin off the pineapple with a sharp knife and cut out any brown spots of skin left behind. Slice the pineapple into 1/2-inch slices and cut the cores out of the slices. Pin the slices onto the ham with toothpicks.
  • Bake ham in the preheated oven until a meat thermometer inserted into the thickest part of the ham reads 140 degrees F (60 degrees C), 1 1/2 to 2 hours.
