EASTER LAMB CAKE
My grandmother started the tradition of making this molded Easter lamb cake when I was little. We continue to make it every Easter. The memory is so special that I keep the lamb mold in my kitchen next to my cookbooks as a decoration. Make sure to grease and flour the mold really well so that the cake does not stick. - Debra Waggoner, Grand Island, Nebraska

COOKED ICING (FROSTING)
This is a simple recipe to use when you are long on time and short on powdered sugar. The secret to no lumps is to use a low heat when whisking the four and milk.

Steps:
- In a small sauce pan, combine 1/2 c milk and flour. Over low heat, whisk together to remove lumps from flour. When mixture is smooth, add in sugar and remaining milk. Continue to whisk and increase heat to medium. Bring mixture to a boil and continue to whisk for one minute. Remove from heat and transfer to a bowl. Place plastic wrap over top to prevent a 'skin' from forming. Let cool completely (may place in refrigerator).
- When mixture is cool, combine butter or margarine and shortening in a large mixing bowl. Beat well till combined. Add flour/sugar/milk mixture along with salt and vanilla and beat well.

MY FAVORITE COOKIE ICING/FROSTING
I have used several different icing recipes on my cookies over the years and this is by far my favorite. I find that cookie glaze, while simple and easy, doesn't have enough flavor and is almost impossible to do any real decorating with. My 4-yr-old DS loves to help me decorate cookies and this frosting even stands up when piped on, just like you would decorate a cake.

Steps:
- Cream together butter and sugar. Slowly mix in milk, then vanilla and almond.
- Whisk until fluffy.
- Can be spread or piped onto cookies.
- Icing will begin to harden in less than 30 minutes. Wait a few hours before stacking iced cookies.
Tips:
- Use fresh, high-quality ingredients. This will make a big difference in the taste and texture of your frosting.
- Cream the butter and sugar together until light and fluffy. This will help to incorporate air into the frosting, making it smooth and creamy.
- Add the milk or cream one tablespoon at a time, until you reach the desired consistency. If you add too much liquid, the frosting will be too thin.
- Use a variety of extracts and flavorings to create different flavor combinations. Some popular options include vanilla, almond, chocolate, and peppermint.
- If you want a thicker frosting, add more powdered sugar. If you want a thinner frosting, add more milk or cream.
- If you want a stiffer frosting, chill it for 30 minutes before using. If you want a softer frosting, let it come to room temperature before using.
- Decorate your cookies with frosting immediately after they have cooled. This will help the frosting to adhere to the cookies.
Conclusion:
With these tips in mind, you can easily create a delicious and beautiful cookie frosting that will make your cookies the star of the show. Whether you're a seasoned baker or a beginner, these recipes will help you create frosting that is both delicious and impressive. So get creative and have fun!
