Steps:
- Heat 2 tablespoons of the oil in a Dutch oven or large pot over medium-high heat. Add the beef and cook, breaking up the meat with a wooden spoon, until just browned, about 4 minutes. Transfer to a plate with a slotted spoon.
- Reduce the heat to medium and add the remaining 2 tablespoons oil. Add the onions and cook, stirring occasionally, until softened and lightly golden, about 10 minutes.
- Add the jalapeno and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring frequently, until fragrant, about 30 seconds.
- Add the chili powder, cumin, paprika, cayenne, 1/2 teaspoon salt and the tomato paste. Cook, stirring frequently, until coated and fragrant, about 1 minute.
- Stir in the beef broth and crushed tomatoes and bring to a boil over high heat. Stir in the cooked ground beef and any accumulated liquid, then reduce the heat to medium-low. Simmer the chili, partially covered, until the beef is tender and the sauce is slightly thickened, about 30 minutes.
- Stir in the beans and their liquid and simmer uncovered until the beans are softened and the chili is thickened, about 30 minutes more. Season with salt and pepper.
- Top with sour cream, Cheddar and scallions. Serve with tortilla chips.
MY FAVORITE CHILI RECIPE
I make chili many different ways, but this is my favorite go to recipe that I learned from my grandmother Swecker. She never wrote it down, I just watched her make it and paid attention to detail. I have changed it a bit over the years.

This is the only chili recipe I've used for the last 8 years or so. I think its pretty outstanding. I vary the hot ingredients depending on who will be eating it and the mood I'm in. I've also used ground venison and it was just as good.

Tips:
- Choose the right chili powder. There are many different types of chili powder available, so it's important to choose one that has a good flavor and heat level for your taste. If you're not sure which one to choose, ask your local grocer or look for recommendations online.
- Use fresh ingredients. The fresher your ingredients, the better your chili will taste. If possible, use fresh vegetables, meat, and spices. Avoid using canned or frozen ingredients, as these can often be bland and watery.
- Brown the meat before adding it to the chili. Browning the meat will help to develop its flavor and create a richer chili. Be sure to brown the meat in a large pot or Dutch oven over medium-high heat, stirring frequently.
- Don't skimp on the spices. Chili is a dish that's meant to be flavorful, so don't be afraid to use a generous amount of spices. Some common spices used in chili include chili powder, cumin, oregano, garlic powder, and onion powder. You can also add other spices to your liking, such as cayenne pepper, paprika, or chipotle powder.
- Simmer the chili for at least 30 minutes. This will allow the flavors to meld and develop. The longer you simmer the chili, the better it will taste. If you're short on time, you can simmer the chili for a shorter amount of time, but it won't be as flavorful.
- Serve the chili with your favorite toppings. Some popular toppings for chili include shredded cheese, sour cream, diced onions, and chopped cilantro. You can also serve the chili with cornbread, crackers, or rice.
Conclusion:
Chili is a delicious and versatile dish that can be enjoyed by people of all ages. It's a great way to use up leftover meat and vegetables, and it's also a budget-friendly meal. Whether you like your chili mild or spicy, there's a recipe out there for everyone. So next time you're looking for a hearty and flavorful meal, give chili a try.
