MEAT LOAF

Meat Loaf image

Nothing says classic comfort like Ina Garten's Meatloaf recipe from Barefoot Contessa on Food Network.

Provided by Ina Garten

Categories     main-dish

Time 1h25m

Yield 6 servings

Number Of Ingredients 12

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

THE BEST MEATLOAF I'VE EVER MADE

The Best Meatloaf I've Ever Made image

When I was growing up, my mom never ever made meatloaf and I always wanted to try it - I finally tried it at a restaurant and loved it. When I moved out on my own I started experimenting with different recipes and creating my own version. I finally came up with the best meatloaf I have ever made, and I wanted to share it.

OUR FAVORITE MEATLOAF

Our Favorite Meatloaf image

This ultimate meatloaf recipe took rounds and rounds of testing to get just right. Our final version incorporates an ideal blend of seasoned ground beef and pork, aromatics, and breadcrumbs and bakes in a freeform loaf on a baking sheet instead of in a loaf pan for maximum browning. The result is a loaf that is savory, tender, and juicy, yet holds together well when sliced.

CLASSIC MEATLOAF

Classic Meatloaf image

Good meatloaf is about as comforting as comfort food gets. Thankfully, meatloaf doesn't have to be complex to be good. It just needs to be tender (from breadcrumbs soaked in milk and gentle handling) and flavorful (from onion, garlic, and ketchup).

1/2 cup ketchup
Coarse salt and ground pepper

Tips:

  • Use a combination of ground beef and ground pork. This will give the meatloaf a more flavorful and moist texture.
  • Add some bread crumbs to the meatloaf mixture. This will help to bind the ingredients together and keep the meatloaf from becoming too dense.
  • Season the meatloaf generously with salt, pepper, and other spices. This will help to give the meatloaf a delicious flavor.
  • Don't overmix the meatloaf mixture. Overmixing can make the meatloaf tough.
  • Bake the meatloaf in a loaf pan at 350 degrees Fahrenheit until it reaches an internal temperature of 160 degrees Fahrenheit.
  • Let the meatloaf rest for 10 minutes before slicing and serving. This will help the meatloaf to stay moist and juicy.

Conclusion:

Meatloaf is a classic comfort food that is easy to make and can be enjoyed by people of all ages. It is a versatile dish that can be served with a variety of sides, such as mashed potatoes, green beans, or macaroni and cheese. With a little planning and preparation, you can make a delicious meatloaf that will be sure to impress your family and friends.
