MY BEACH GROUPER
This recipe came about from trying different ways to prepare grouper. Taking a little of this and then some more from other recipes, I came up with this one that is our favorite. We really enjoy the taste of this and especially the extra crispness when it is finished in the broiler. Yes, you can just bake it if you don't like using a broiler. Paprika may be substituted for Old Bay Seasoning. Note: If broiling, Do NOT omit the mayonnaise as it prevents fish from being dry.

Tips for Cooking the Perfect Beach Grouper
- Choose the freshest grouper possible. Look for fish with bright, clear eyes and firm, moist flesh. Avoid any fish that has a slimy or off smell.
- Cook the grouper over high heat. This will help to sear the outside of the fish and keep it moist and juicy on the inside.
- Don't overcook the grouper. Grouper is a delicate fish that can easily become dry and tough if it is overcooked. Cook it just until it is opaque in the center, about 3-4 minutes per side for a 1-inch thick fillet.
- Season the grouper simply. Grouper has a mild flavor that can easily be overpowered by strong spices. A simple seasoning of salt, pepper, and lemon juice is all you need to bring out the natural flavor of the fish.
- Serve the grouper with your favorite sides. Grouper is a versatile fish that can be served with a variety of sides, such as rice, potatoes, or vegetables. It is also delicious when grilled or baked.
