- 1. Generously spray a pie plate or spring form pan with non stick spray oil, sides and bottom.
- 2. Peel and slice sweet potatoes into rounds.
- 3. In a large bowl mixed together 1 1/2 c. of plain applesauce, 1/4 c. brown sugar, 1 tsp. cinnamon, and 1/4 tsp. nutmeg.
- 4. Pour sliced potatoes into bowl and make sure each potato is coated on both sides with applesauce mixture. Layer in pan and pour any leftover sauce on top and spread out. Top with walnuts.
- 5. Bake 375° for 1-1.5 hrs. or until fork can be easily inserted. NOTE: I placed my pan on a baking sheet to prevent spills in the oven, that can increase baking time.

- 1. Pre-heat oven to 375.
- 2. Place sweet potatoes in a 3 quart saucepan; add enough water to cover.
- 3. Heat to boiling; reduce heat and cover and simmer for 30 to 35 minutes. (or microwave potatoes wrapped in paper towels for 30 minutes or until tender)
- 4. Drain sweet potatoes and remove skins, cut each sweet potato linghwise in half.
- 5. Place sweet potatoes, cut side up in a ungreased 2 quart casserole or square baking dish, 8 X 8 X 2 inches.
- 6. Spread applesauce over sweet potatoes.
- 7. Mix brown sugar, nuts, cranberries and cinnamon and sprinkle over applesauce.
- 8. Dot with butter and cover and bake about 30 minutes or until hot.
- 9. For a shortcut: use one can (18 ounce) vacuum-packed sweet potatoes, cut lengthwise in half instead of fresh sweet potatoes.
