Yield 8 servings

Number Of Ingredients 11

4 pickled herring fillets, sliced into 1/4" pieces
1/4 medium onion, finely chopped
1/4 small fennel bulb, finely chopped
1 cup sour cream
2 tablespoons whole grain Dijon mustard
2 tablespoons finely chopped fresh chives
1 tablespoon finely grated peeled horseradish or 2 teaspoons prepared horseradish
1 tablespoon fresh lemon juice
Kosher salt, freshly ground pepper
8 slices dark seeded bread or rye bread, cut into squares or triangles
Fresh parsley leaves (for serving)

Steps:

  • Mix pickled herring, onion, fennel, sour cream, mustard, chives, horseradish, and lemon juice in a small bowl; season with salt, pepper, and more lemon if desired. Transfer to a large jar; cover and chill at least 12 hours and up to 2 weeks. Serve herring mixture on bread topped with parsley.

Tips:

  • Activate the yeast properly: Ensure the water is warm enough (105-115°F) to activate the yeast but not too hot to kill it. Proof the yeast in a warm place, free from drafts, for the specified time.
  • Use high-quality ingredients: Freshly milled rye flour, stone-ground whole wheat flour, and unbleached all-purpose flour will yield the best results.
  • Mix and knead the dough thoroughly: This will help develop the gluten and give the bread a chewy texture.
  • Let the dough rise in a warm place: This will allow the yeast to work its magic and produce a light and airy loaf.
  • Bake the bread at a high temperature initially: This will create a crispy crust. Then, reduce the temperature to finish baking the bread through.
  • Let the bread cool completely before slicing: This will help prevent the bread from crumbling.

Conclusion:

With its slightly sour and nutty flavor, mustard rye bread is a delicious and versatile loaf that can be enjoyed in various ways. Whether you prefer it toasted with butter and jam, slathered with cream cheese and smoked salmon, or simply enjoyed on its own, this bread is sure to become a favorite. So, gather your ingredients, follow these tips, and bake a loaf of mustard rye bread today!
