One 9-pound bone-in spiral-sliced ham
1 cup honey
1/3 cup brown sugar
4 tablespoons unsalted butter
3 tablespoons Dijon mustard
2 tablespoons whole-grain mustard
2 teaspoons finely chopped fresh thyme

Steps:

  • Preheat the oven to 325 degrees F.
  • Place the ham in a small roasting pan, cut-side down, and pour 1/2 cup water into the bottom of the pan. Cover the pan tightly with foil. Bake until the ham is heated through, about 1 1/2 hours.
  • Meanwhile, combine the honey, brown sugar, butter, Dijon mustard, whole-grain mustard and thyme in a small saucepan. Cook over medium-low heat until the sugar has dissolved, about 2 minutes.
  • Increase the oven temperature to 375 degrees F. While the ham is still hot, remove the foil and carefully pour off the water from the roasting pan; it is fine if a little water remains. Brush about half of the glaze over the ham. Return to the oven, uncovered, for 5 minutes, until the ham is golden brown and beginning to glaze. Brush with the remaining glaze and bake for another 7 to 10 minutes, until the ham is well-browned and glazy; be careful not to let the glaze burn. Serve warm.

1/4 cup orange marmalade
1/4 cup prepared mustard

  • Place ham in a shallow roasting pan; add water to pan. Bake, uncovered, at 325° for 1 hour. , In a small bowl, combine the marmalade, mustard and ginger. Brush some over the ham. Bake 1 hour longer or until a thermometer reads 140°, brushing occasionally with glaze.

1/2 tsp. whole cloves
1/2 c. dijon mustard
1/2 c. honey
1/2 tsp. black pepper

Steps:

  • For the ham: Preheat the oven to 325 ̊ Fahrenheit. Score the surface of the ham with a sharp knife in a diamond pattern, about 1/4 inch deep. Stick the cloves in between the diamonds.
  • Place the ham on a rack in a large roasting pan, tent it with foil and bake until warmed through, about 2 hours.
  • For the glaze: Mix the mustard, honey and pepper in a medium bowl.
  • Remove the ham from the oven and uncover. Brush with half of the glaze, making sure to get it in the scored lines. 1 (1/4 ounce) envelope unflavored gelatin
1/4 cup lemon juice
4 eggs
3/4 cup sugar
3 tablespoons dijon-style mustard
1/2 teaspoon salt
1/2 cup cider vinegar
1/2 cup water
1/2 pint whipping cream, whipped
2 tablespoons parsley, chopped

Steps:

  • Sprinkle the gelatin over the lemon juice and let it stand for about 5 minutes to soften.
  • In a medium-size saucepan whisk the eggs and add the sugar, mustard, salt, vinegar and water. Beat until well blended.
  • Add the softened gelatin mixture.
  • Place the saucepan over moderate heat and cook, stirring constantly, until the mixture begins to thicken;do not allow the mixture to boil.
  • Refrigerate until the mixture is thickened and almost set, stirring occasionally with a rubber spatula to determine thickness (the mixture should make soft mounds when scooped up and dropped from the spatula). Meanwhile, oil a 4-cup mold and set it aside.
  • When the gelatin/mustard mixture has thickened, gently fold the whipped cream and parsley into the thickened mixture.
  • Pour the mousse into the prepared mold, cover with plastic wrap and refrigerate for several hours or overnight to set. May be refrigerated up to 3 days.
  • To unmold, run the tip of table knife around the edges of the mold, dip the bottom of the mold in warm water and invert onto a serving platter. I use a Tupperware mold, so it just slips right out.

1 pkg gelatin, unflavored, 1 envelope
1/4 c lemon juice
4 eggs, slightly beaten
2/3 c sugar
3 Tbsp dijon mustard
1/2 tsp salt
1/2 c cider vinegar
1/2 c water
1/2 pt whipping cream, whipped
2 Tbsp parsley, chopped, (pretty but optional)

Steps:

  • 1. Sprinkle gelatin into lemon juice to soften.
  • 2. Into heavy saucepan, put eggs, sugar, mustard, salt, vinegar, water, and blend.
  • 3. Add gelatin mixture.
  • 4. Cook over medium heat, stirring constantly, until thickened but do not boil.
  • 5. Chill until thickened but not set.
  • 6. Fold in whipped cream and parsley (if using).

2 cups light brown sugar
1 cup clover honey (one 8-ounce jar)
1 cup country Dijon mustard (see Cook's Notes)

Steps:

  • Adjust the oven racks to accommodate a large roasting pan and preheat the oven to 350 degrees F. Fit the pan with a shallow rack.
  • Unwrap the ham and rinse it in cold water. Place it on the rack in the roasting pan. Cover the pan with aluminum foil, leaving a 2-inch opening to allow steam to escape. Bake the ham for half the estimated cooking time, about 3 hours. (Total cooking time is about 20 minutes per pound.)
