ASPARAGUS SALAD WITH SOY-MUSTARD DRESSING
There are real differences between skinny and fat asparagus spears, aside from appearance, and it's worth attending to them. With either, you must first break off the woody bottoms (magically, they snap off in pretty much the right place every time), a quick but necessary chore. But it is always worth peeling thick asparagus, from stem to the bottom of the flower bud. The best way to do this is with a vegetable peeler. Lay each spear on a flat surface and give it a few quick strokes. The difference between peeled and unpeeled thick spears is substantial. When they are peeled, they can be cooked for considerably less time, leaving them bright green and perfectly crisp-tender, rather than a soggy mess. They're done when you can easily insert a skewer or a thin-bladed knife into the thickest part of the stalk. (If you don't peel them, the soggy mess is just about the only way to get the skin tender.)

Steps:
- Bring a large pot of salted water to a boil. Cook asparagus just until bright green but tender, up to 4 or 5 minutes for thicker spears. Drain and immediately rinse with cold water (or, better still, plunge into ice water). Drain again and set aside. (You can wrap asparagus and refrigerate for up to a day at this point. Bring to room temperature before serving.)
- Whisk together mustard, egg yolks, soy sauce, lemon juice and just enough olive oil (start with a tablespoon) to make a smooth dressing. Toss with asparagus and serve.

BRUSSELS SPROUT SLAW WITH HONEY-MUSTARD DRESSING
This sweet-and-savory Brussels sprout slaw is the ultimate prep-ahead dish. In fact, we really recommend making it a day ahead, and not just because it'll free up some time: A day of rest in the fridge results in more tender Brussels sprouts that are infused with flavor. Honey and Dijon mustard dressing sweetens and adds multi-dimensional character to these compact members of the cabbage family, creating a modern slaw that shines, especially when topped with savory bacon and toasty walnuts.

SIMPLE HONEY MUSTARD SAUCE/DRESSING
I've been making this easy dipping sauce since high school. I'm posting the exact amounts of the original recipe I was given by an acquaintance. Given the generous yield, it is very easily scaled down; I usually just whip up a small batch as needed. This can be served straight away, or stashed in the fridge to meld a bit before using.

Categories Sauces
Time 5m
Yield 1 3/4 cups, 14 serving(s)
Number Of Ingredients 3
Steps:
- Mix all three ingredients together until thoroughly combined.
- Hints - Low fat or reduced fat mayo is fine to use - it's all that I usually have in the house.
- Warm the honey for a few seconds in the microwave. It will make it much easier to combine.
- * For quick scaling, use 4 parts mayo, 2 parts honey, 1 part mustard. Frequently I'll use 2 tablespoons mayo, 1 tablespoon honey, 1/2 tablespoon (1 1/2 teaspoons) mustard for 1-2 servings, or 4 tablespoons mayo, 2 tablespoons honey, and 1 tablespoon mustard for 2-3 generous servings.
Tips:
- Use a good quality mustard. The flavor of the mustard will be the most prominent flavor in the dressing, so it's important to use a mustard that you enjoy the taste of. - Use a variety of mustards. For a more complex flavor, try using a combination of different types of mustard, such as Dijon mustard, yellow mustard, and whole-grain mustard. - Adjust the vinegar to your taste. The amount of vinegar in the dressing will determine how tangy it is. Start with a small amount and add more to taste. - Use fresh herbs. Fresh herbs will add a pop of color and flavor to the dressing. Use whatever herbs you have on hand, such as parsley, cilantro, or chives. - Let the dressing rest before using. This will allow the flavors to meld together and develop. If you're short on time, you can use the dressing immediately, but it will be even better if you let it rest for at least 30 minutes. Conclusion:
Mustard dressing is a versatile dressing that can be used on a variety of salads, vegetables, and proteins. It's also a great dipping sauce for chicken, fish, or vegetables. With its tangy, slightly spicy flavor, mustard dressing is a surefire way to add flavor to your favorite dishes. Whether you're using a classic mustard dressing or trying a new variation, you're sure to find a mustard dressing that you'll love.
