2 tablespoons unsalted butter
Four 8-ounce skinless, boneless chicken breasts, slightly pounded, and flattened
Fine sea salt and freshly ground pepper
3 tablespoons chopped shallots
1/2 cup brandy, apple brandy, pear brandy, or Kentucky bourbon
1/2 cup dry white wine
3 tablespoons Dijon mustard
1 1/2 cups homemade chicken stock, or store-bought low sodium chicken broth
1/2 cup heavy cream
3 tablespoons minced fresh chives

Steps:

  • 1. Heat the butter in a wide, heavy-bottomed sauté pan until it begins to melt and foam. Season the chicken with salt and pepper. Add the breasts to the pan and brown them on one side, 6 to 8 minutes. Turn them over and cook them until well browned on the other side, about 6 more minutes. The chicken is done when it is firm to the touch and the juices run clear. Transfer the chicken to a plate and cover with foil to keep warm.
  • 2. Add the shallots to the same pan and sauté until softened but not browned, about 2 minutes. Lower the heat, move the pan away from the flame, lean away from it, and carefully pour in the brandy, taking care not to let it flame. (If it does flame, cover with a pot lid until the brandy cooks out.) Continuing to be mindful of potential flare-ups, return the pan to the stove and let the brandy evaporate over low heat.
  • 3. Add the wine to the pan, raise the heat to high, and bring it to a boil. Whisk in the mustard and let reduce for 1 minute. Pour in the broth and cook for 2 to 3 minutes more.
  • 4. Stir in the cream and bring just to a boil. Stir in the chives. Return the chicken breasts to the pan and simmer gently until the stock has reduced and thickened slightly, 4 to 5 minutes.
  • 5. To serve, put 1 chicken breast in the center of each of 4 plates and spoon some sauce over the top.
  • Your Nightly Specials Instead of chicken, use small beefsteaks or pork loin chops. Cooking time will vary based on thickness and desired doneness, but will be about 2 minutes more per side than the chicken.
  • For a spicier sauce, add 1 teaspoon hot, dry, English mustard to the sauce along with the Dijon.

1 tablespoon olive oil (use more or less, depending on your pan)

1/2 cup chicken stock
1/3 cup half-and-half or 1/3 cup heavy cream
1 tablespoon Dijon mustard
2 -3 teaspoons finely chopped fresh French tarragon
whole french tarragon leaf, for garnish

Steps:

  • If chicken breasts are quite thick, pound them with a meat mallet or other heavy object until they are about 3/4 inch thick.
  • Finely chop the tarragon leaves.
  • Heat olive oil over medium-high heat in a heavy frying pan just big enough to hold all the chicken without crowding. While oil heats, season chicken with salt and pepper.

2 tablespoons olive oil, plus more for breasts
Coarse salt and freshly ground pepper

2 1/2 tablespoons Dijon mustard
3/4 cup coarse breadcrumbs
2 tablespoons chopped fresh thyme, plus more for garnish
3/4 cup homemade or low-sodium canned chicken stock
1/2 cup heavy cream

Steps:

  • Preheat oven to 375 degrees. Rub chicken breasts lightly with olive oil, and season with salt and pepper.
  • Combine 2 tablespoons butter with the mustard; reserve 2 teaspoons for sauce. Melt remaining 2 tablespoons butter; mix with breadcrumbs and thyme, and season with salt and pepper.

2 tablespoons mustard (see note at end of directions)
2 teaspoons orange marmalade
1/2 teaspoon paprika
1/8 teaspoon chili pepper flakes
2 garlic cloves, minced
1/2 cup chicken stock (cube is fine)
2 -3 tablespoons olive oil
4 boneless skinless chicken breasts
1/2 cup flour
salt and pepper

Steps:

  • In small bowl, mix olive oil, honey, mustard*, orange marmalade, paprika, pepper flakes, garlic and stock. If you want, use a hand blender to get all the ingredients combined well. Set aside.
  • Heat olive oil in large skillet over medium-high heat. If breasts are big, cut in half horizontally. Season flour with salt and pepper, and dredge chicken in flour. Fry in pan about 2-3 minutes each side.
  • Pour sauce around chicken and cover. Lower heat to medium and simmer for about 10-12 minutes.
  • Remove chicken to plate and pour sauce over top and serve.
  • *NOTE* I used a mustard called Bone Suckin' Sweet Hot Mustard which I bought at a local kitchenware store (Lakeland Ltd.) here in the UK. It contains ingredients such as molasses, brown sugar and jalapeno peppers. You can use a similar type of mustard if you can find one or just use dijon. However, I think that a bold flavored mustard like the one I used is what really brought this dish together. 1 1/2 teaspoons vegetable oil

1 large egg

This recipe is from The Costco Connection, June 2009. It is very quick and delicious. The recipe calls for breast fillets which are smaller and thinner than breasts. If using breasts it might be necessary to flatten slightly to promote quick and even cooking.

4 (4 ounce) boneless skinless chicken breasts (fillets)
1/4 cup all-purpose flour
salt and pepper, to taste
2 tablespoons olive oil
1/3 cup white wine
6 whole fresh sage leaves
1 1/2 cups chicken broth
1 1/2 tablespoons whole grain mustard
2 tablespoons butter

Steps:

  • Lightly season flour with salt and pepper. Dredge the chicken fillets in the flour.
  • Warm the olive oil over moderate heat, add the chicken fillets and cook for 4 to 5 minutes or until lightly brown. Turn and continue to cook an additional 6 to 9 minutes.
  • Remove the fillets from skillet, add the white wine and scrap up any browned bits in the pan. Increase heat to high and cook the wine for 4 minutes. Add the chicken broth and sage leaves.
  • When broth has reduced by about half, whisk in mustard and return chicken to pan; cook for a couple of minutes to blend flavors. Remove chicken, whisk in butter and when sauce thickens pour over chicken. Serve immediately.

1/4 teaspoon salt
1/8 teaspoon black pepper
1 can (14.5 ounces) chicken broth
1/4 cup drained capers
1/2 teaspoon dried rosemary
1/4 teaspoon dried thyme
2 tablespoons Dijon mustard
1 tablespoon honey
4 1/2 cups cooked hot couscous

Steps:

  • Coat a large skillet with cooking spray. Place over medium-high heat. Season chicken on both sides with salt and pepper. Add to skillet; cook each side about 5 to 6 minutes, or until cooked through. Remove and keep warm. Add broth, capers, rosemary, and thyme to skillet; cook over medium-high heat, scraping up any browned bits from bottom of skillet, for 5 minutes. Remove skillet from heat; stir in the mustard and honey. Pour sauce over chicken and serve with couscous.

4 bone-in, skin-on chicken breasts
Salt
black pepper to taste
2 tablespoons vegetable oil
5 tablespoons verjuice
1 cup chicken stock
2 tablespoons Dijon mustard
2 tablespoons fresh thyme leaves

Steps:

  • Heat oven to 450 degrees. Sprinkle chicken generously on all sides with salt and pepper.
  • Heat oil in heavy 12-inch ovenproof skillet over medium-high heat until hot but not smoking. Add chicken and brown well on both sides, about 6 to 8 minutes total. Turn the chicken skin side up, put the skillet into the oven and roast until the chicken is just cooked through, about 15 to 17 minutes. Being very careful of the hot pan, remove it from the oven, transfer chicken to a platter, and tent with foil to keep warm.
  • Return pan to stove top, add verjuice and bring to a boil over high heat, scraping up all those brown bits from the bottom of the pan. Add stock and continue to boil gently until reduced by about 1/3, about 5 to 7 minutes. Whisk in mustard and thyme, adjust seasoning and spoon the sauce over the chicken. Serve with any remaining sauce separately.

4 skinless, boneless chicken breast halves, about 1 1/2 pounds
Salt to taste if desired
Freshly ground pepper to taste
1 tablespoon butter
4 tablespoons finely chopped onion
1/4 teaspoon dried thyme
1 tablespoon red-wine vinegar
1/4 cup dry white wine
1/2 cup fresh or canned chicken broth
2 teaspoons tomato paste
1/4 cup heavy cream
1 tablespoon Dijon-style mustard
2 teaspoons finely chopped parsley, optional

Steps:

  • Sprinkle the chicken breast halves with salt and pepper.
  • Heat the butter in a heavy skillet and add the breasts. Cook until browned, about 6 minutes. Turn the pieces and cook about 6 minutes longer.
  • Remove the chicken pieces to a warm platter and set aside. Add the onion and thyme to the skillet and cook briefly, stirring, until the onion is wilted. Add the vinegar and wine and bring to a boil. Add the chicken broth and bring to a boil. Stir in tomato paste. Cook until reduced by half and add the cream. Bring to a full rolling boil and stir in the mustard. Put sauce through a strainer, pressing to extract as much liquid as possible. There should be about 1/2 cup.
  • Spoon the sauce over the chicken pieces and garnish, if desired, with parsley. Serve immediately.

1 (10 3/4 ounce) can Campbell's Cream of Chicken Soup
1/4 cup mayonnaise
2 tablespoons honey

Steps:

  • Melt butter in large skillet over medium-high heat.
  • Cook chicken for 10 minutes or until browned.

1 tablespoon butter
1 tablespoon olive oil
2 boneless chicken breasts, skin on. You will likely need to buy bone-in breasts and debone them. Or you can use boneless, skinless, if you have to.
1 cup chopped shallots
2 cups sliced mushrooms
1 garlic clove, finely chopped
1/2 cup white wine
1 cup low-salt chicken stock
1/4 cup cream
2 tbsp fresh or 1 tbsp dried herbs (e.g. sage, rosemary, thyme, tarragon)
1 teaspoon Dijon mustard

Steps:

  • Melt butter and oil in heavy frying pan over medium high heat. Season chicken both sides. Pan-fry, skin side up, for 5 minutes. Then pan-fry skin side down until skin is brown and almost crispy, about 10 minutes. Transfer chicken to plate. Add shallots and mushrooms to pan, reduce heat to medium-low. Season and sauté for about 10 minutes; shallots will soften and mushrooms will release water. Add wine; simmer until all liquid is nearly evaporated, scraping up browned bits. Add stock and herbs, stir. Return chicken to pan, skin side up, so it stays crispy. Simmer until chicken is cooked, about 15 minutes. Transfer chicken to serving plate. Stir cream and mustard into the pan. Increase heat to high, cook until sauce thickens, about 2 minutes. Check seasoning. Serve with buttery mashed potatoes, a dark green vegetable, and the sauce over the chicken.
