STEAMED MUSSELS WITH COCONUT MILK AND THAI CHILES

Steamed Mussels With Coconut Milk and Thai Chiles image

From Food and Wine Magazine - These mussels make a great appetizer or add some crusty sourdough bread and a salad and make a meal. They are just a litte sweet and just the right amount of spicy! Use a good lager to increase the great flavors. Food and Wine says: "Tyler Florence likes making this one-pot dish for parties because it requires so little cleanup. He simply steams plump mussels in lager, then tosses them in a creamy, spicy, slightly tart sauce made with ginger, chiles, coconut milk and lime juice. The result is a Thai-inflected version of the French classic."

Categories     Mussels

Time 30m

Yield 8 serving(s)

Number Of Ingredients 11

4 garlic cloves, coarsely chopped
2 Thai chiles, thickly sliced
1 1/2 inches piece fresh ginger, peeled and coarsely chopped
1 cup cilantro leaf
1 lime, zest of, finely grated
1/4 cup extra virgin olive oil
2 (13 1/2 ounce) cans unsweetened coconut milk
2 limes, juice of
salt
1 (12 ounce) can lager beer
5 lbs mussels, scrubbed

Steps:

  • In a food processor, combine the garlic, chiles, ginger, cilantro, lime zest and olive oil and process to a paste; transfer to a large bowl. Whisk in the coconut milk and lime juice and season with salt.
  • In a large soup pot, bring the lager to a boil over high heat. Boil until reduced to 1/2 cup, about 7 minutes. Add the mussels, cover and cook, shaking the pot a few times, until the mussels just begin to open, about 4 minutes.
  • Uncover the mussels and stir in the coconut milk mixture. Cover and cook, shaking the pot a few times, until all of the mussels open, about 8 minutes. Spoon the mussels and broth into bowls and serve.
  • Note: Beer: Since this Thai-influenced recipe calls for lager, a Thai lager would be a natural accompaniment. Consider the hoppy Singha lager from Boon Rawd Brewery, which has been making beer in Thailand for 72 years.

SPICY COCONUT MUSSELS WITH LEMONGRASS

Spicy Coconut Mussels With Lemongrass image

Mussels are cheap, delicious and relatively fun to eat: saline, mild and plump little bites. They are also extremely easy to cook, especially if they've been farmed (most mussels you find in markets have been). Just give them a good rinse, and they are ready to go. Here the treatment heads in the general direction of Thailand, offering a sauce of coconut milk, lemongrass, garlic and chiles that perfectly frames the sweetness of the meat.

Provided by Melissa Clark

Categories     dinner, weekday, main course

Time 20m

Yield 2 servings

Number Of Ingredients 12

2 tablespoons coconut or safflower oil
1 shallot, finely chopped
3 garlic cloves, finely chopped
1 stalk lemongrass, trimmed (outer layers removed) and finely chopped
1/2 to 1 small hot chile (like Thai bird, Serrano, Scotch bonnet or jalapeño), seeded and finely chopped
1 cup unsweetened coconut milk
2 pounds fresh mussels, rinsed well
Zest of 1/2 lemon
1 teaspoon lemon juice, or to taste
1/2 teaspoon Asian fish sauce, or to taste
1/2 cup whole cilantro leaves
1 or 2 croissants, split in half.

Steps:

  • Heat the oil in the bottom of a large pot until hot. Add the shallot, garlic, lemongrass and chile. Cook over medium heat until soft, about 3 minutes. Add the coconut milk and mussels. Cover with a tight-fitting lid and cook until the mussels have opened, 5 to 7 minutes (discard any mussels that remained closed). Remove from heat, and use a slotted spoon to transfer the mussels to a large bowl, leaving the liquid in the pot. Stir the lemon zest and juice, fish sauce and cilantro into the pot. Taste and add more fish sauce and/or lemon juice if needed (fish sauce provides the salt).
  • As the mussels cook, heat the broiler. Place the croissants, cut side up, on a small baking sheet. Run under the broiler until just golden. Put the mussels in two wide, shallow bowls. Ladle the broth over them and serve with the croissants.

COCONUT LIME MUSSELS

Coconut Lime Mussels image

Provided by Jeff Morgan

Yield Serves 6–8 as an appetizer, 4 as a main course

Number Of Ingredients 10

2 tbsp extra-virgin olive oil
2 shallots, minced
2 garlic cloves, minced
2 tsp peeled and grated fresh ginger
2 tsp minced lemongrass
3 tbsp fresh lime juice
2 cups/480 ml dry white wine
1 cup/240 ml unsweetened coconut milk
2 to 2 1/2 lb/910 g to 1.2 kg mussels, scrubbed and debearded
2 tbsp minced fresh flat-leaf (Italian) parsley or scallions

Steps:

  • In a large pot, heat the olive oil over medium-high heat. Add the shallots and sauté until translucent, about 2 minutes. Add the garlic, ginger, and lemongrass and stir to mix well. Simmer until fragrant, about 30 seconds. Stir in the lime juice. Add the wine and stir, using a wooden spoon to scrape up any browned bits that have stuck to the bottom of the pot.
  • Bring the wine mixture to a boil and cook for about 2 minutes. Reduce the heat to medium and stir in the coconut milk. Add the mussels to the pot, discarding any that do not close to the touch, and stir gently to coat them with the liquid. Cover and cook until all the shells have opened, about 5 minutes. Discard any mussels that remain closed.
  • Divide the mussels among warmed bowls and ladle in the hot broth. Garnish with the parsley or scallions and serve at once.

Tips:

  • Choose fresh mussels: Look for mussels that are tightly closed and have a briny, fresh smell. Avoid any mussels that are cracked, chipped, or have an off odor.
  • Clean the mussels thoroughly: Use a stiff brush to scrub the mussels under cold running water. Remove any barnacles or debris from the shells.
  • Use a large pot: Mussels will release a lot of liquid as they cook, so it's important to use a large pot that can accommodate them all.
  • Don't overcrowd the pot: If you overcrowd the pot, the mussels won't cook evenly. Aim to have about 1 pound of mussels per quart of liquid.
  • Cook the mussels just until they open: Overcooking will toughen the mussels, so cook them just until they open. This should take about 5-7 minutes.
  • Serve the mussels immediately: Mussels are best served hot, so serve them immediately after they're cooked.

Conclusion:

Steamed mussels are a delicious and easy-to-make seafood dish. With just a few simple ingredients, you can create a flavorful and satisfying meal that's perfect for any occasion. Whether you're serving them as an appetizer or a main course, steamed mussels are sure to impress your guests. So next time you're looking for a quick and easy seafood recipe, give steamed mussels a try. You won't be disappointed!
